GIANT Cubera Snapper! Catch Clean Cook (Florida Keys Snapper Fishing)

This is a fish I've wanted to catch my entire life! The Cubera Snapper is the largest snapper species in the world. Every year around the full moon in August and September Giant Cubera snapper spawn offshore on wrecks. This makes it easier to locate these generally solitary and nomadic fish. Cubera Snapper have such large teeth and powerful jaws that they are able to feed on live spiny lobster, which is what we use as bait. Live lobster are the best bait to use when targeting cubera snapper, as this is one of their main staples in their diet! Big Cubera Snapper often get a bad name when it comes to table fare, as they are thought to contain Ciguatera which can cause poisoning. This is more seen in other parts of the Caribbean and the Bahamas and rarely in Florida.

@Carlos Baez yes octopus do, but show me the sardin, Marlin, Salmon or Coalfish, well, when the lobster are plankton, everything eat them, that's normal, but I'm speaking about adult lobste and only a few fish are able to catch and crack them. But my point was that it needs no lobster to get a fish red in the skin or in the case of a salmon or trout the meat. bye

Awesome catch & cook video Viktor! As someone who actually has experienced a bad case of ciguatera from a 20 Lb gag grouper we caught off Haulover inlet back in the early 90's, I stopped eating most big bottom fish long ago. My better half got a severe case of it that lasted several weeks, and won't even touch smaller groupers that I still catch & eat. Good job and when I see you again, remind me to tell you that ciguatera story as there are some details about the disease that I learned from talking to the #1 world renowned expert on ciguatera, Dr Don DeSilva (RIP) from UM's Rosentiel School of Marine Science. Cheers and Great job once again!

100lbs of Cubera in two fish is pretty darn impressive. I have caught a few off the Keys, but not 44lbs nonetheless 57lbs. Definitely caught a lucky night not being covered in sharks. The Avet 30 does work I love mine. Can really put heat on them and never had an issue. Caught a 225lb Yellowfin from a long range boat on an Avet 30. Badass reels.

Gotta agree with ya on the mustad hooks . I buy them in bulk packs and keep them in an airtight ammo can with desiccant packs . I have my favorite sizes for certain fish that I target and I STOCK up when I can because I would be heart broken if my favorite hook gets discontinued ! But I’m not concerned considering I have enough stock piled for prob the next 40 years lol . Hats off to mustad . I’ve had every other hook fail me but never ever a mustad .

Hi, on the tropical east coast of Australia we have a lot of problems with ciguatera. There is a list of fish that we are banned from even having on a boat. They include chinaman fish ,red bass and padlletail. If you get aught with them on board you will receive a hefty fine. There is a list of other fish that it is recommended not to eat. They include barracuda, triggerfish, and any large coral reef species such as coral trout and red emperor and large spanish mackerel. The advice is to release large fish and take smaller legal sized fish. The problem is ciguatoxin which is produced by tiny dinoflagelets growing on dead coral. It is passed on thru the food chain. A 30kg mackerel if it has all its ciguatoxin removed , the toxin will barely cover the head of a pin. It has caused several deaths in Australia. If you get a dose it is recommended you never eat fish again. On some of the small Pacific islands that have no protein available except fish . You often see a lifespan around 45-50 due to residual ciguatoxin. There is no treatment for it other than abstinence from eating fish, Ron.

Re 17:15 that did not look luke a worm. Those looked like the white connective fibre in the the meat. Typically the worms would still have some movement even that fresh of meat after the fish has died. Maybe closer up of the camera would've shown it even better, although it looked close enough to me. Same viewed at 19:50 where Chef Yames is hamdling the filet.

Once you have taken one side off of the big fish... Cut the head off then it makes it easyer to cut the other side because it doesn't bend over on itself

Im cuban and one way to find out if it has ciguatera is to feed a small piece of the fish to ants. Ants will tell you emediate cause they will go to the meat if its good and not go if it is not good. Cats will eat the meat but when they fell like that meat is not good they will throw it up minutes after they eat it and you don't know if its bad or good. Try that buddy and you will see. Awesome fishing buddy.

There is a test for ciguatera, you have to take a piece of meat to a lab. And i was told by an old cuban fisherman that on barracudas when the teeth are light pink is a healthy barracuda if not don’t eat it. 50 plus years eating them and it never failed him.

There is a test for ciguatera, find someone you don't like and feed it to them, put the rest seasoned in your refrig. Check two days after to see if the person got sick, if not, go ahead and eat it.

if you are feeding more than one person with the fish you catch it is ok to use the rod holder or anything else that helps you catch the fish.

In Brazil it is called Caranha, very very tasty, everything takes advantage of this fish, a pity that does not sell in fishmongers. Few have the privilege to try it
