*Ingredients* For the cookies: 25 Oreos 25g cornflour 25g cocoa powder ½tsp bicarbonate of soda ¼tsp baking powder ½tsp salt 190g softened unsalted butter 90g granulated sugar 30g icing sugar 1 large egg For the icing: 75g softened unsalted butter 100g icing sugar 1) Preheat your oven to 180°C/ Gas Mark 4/ 160°C (fan). 2) Finely crush the Oreos using a food processor or a bag and rolling pin. 3) Pour the crushed Oreos into a bowl and whisk them with the cornflour, cocoa powder, bicarbonate of soda, baking powder and salt until combined. 4) In another bowl, whisk together the butter and both sugars until light and fluffy. 5) Add the egg and whisk it in. 6) Add the dry mix to the wet mix and fold it in until combined. 7) Scoop the dough into 30g balls and place them on a cookie sheet 4" apart. 8) Bake for 6-7 minutes and let them cool. 9) For the icing, gradually whisk the icing sugar in with the butter until combined. 10) Pipe the icing into half of the cookies and make a sandwich with the rest of the cookies. 11) Enjoy!

If you're making larger cookies (60g=roughly 2 ounces), bake for 8-10 minutes.
