Ginger chutney | allam pachadi | secret easy recipe | inji chatni | adrak chutney
Let's make a delicious Ginger chutney. I have simplified the process and amplified the taste. Ginger is a very good remedy for cold and has numerous health benefits.
Heat 250 ml / 1 cup water. To boiling water Add the following:
25 g Red chillies 1/4 cup
I have used byadgi red chillies which are mildly spicy but give a nice colour. Adjust the number of chillies axcording to your taste and the spiciness of the chillies
50 g / 2 Lemon balls tamarind / 1/4 cup
50 g / 1/4 cup jaggery
1/2 tsp fenugreek seeds/ methi seeds
Boil for 3 minutes and switch off flame
While it is soaking, peel and chop 50 Ginger1/4 cup (after peeling chopping)
Transfer Ginger to a mixer jar
Add 2 tbsp garlic peeled & chopped
2 tbsp Roasted gram/ pottukadalai
1 tbsp rock salt / as required
Blend to a smooth paste. No additional water was required. In case you need to add more water, add only hot water
For tempering
Heat 1/4 cup sesame seeds oil
Add
1 tsp mustard seeds
1 tsp urad dal
2 dry red chilli
1/4 tsp asafoetida
Curry leaves
2 tbsp garlic
1pinch turmeric pdr
Lower the flame and add the ground paste. You can even switch off the flame and add the paste. Then switch it on again.
Stir continously on a low to medium flame for 3 minutes and switch off the flame
Yummy Ginger chutney is ready. So easy to make and so delicious! Enjoy with every food for it goes well with almost everything, be it rice, rotis, pesarattu, dosa, idli. Bread, khichdi
