For marination and frying:
Ingredients:
Prawns: 1/2 kg
Salt: 1/2 teaspoon + 1/2 to 1/4th teaspoon
Turmeric powder: 1/2 teaspoon
Black pepper powder: 1/4th teaspoon
Spices/garam masala powder: 1/2 teaspoon
Oil: 1/2 cup
Procedure:
1. Remove the veins of prawns.
2. Add 1/2 teaspoon salt and 1/2 teaspoon turmeric powder to the prawns.
3. Leave for about half an hour and wash thoroughly to remove the smell of prawns.
4. Add 1/2 to 1/4th teaspoon salt or add salt as per the taste (prawns were already marinated with salt and then washed, be careful while adding salt)
5. Add black pepper powder and spices or garam masala powder.
6. Mix well and leave for about half an hour.
7. After half an hour of marination, add oil to a pan.
8. Add the marinated prawns (prawns will leave the water).
9. Semi fry the prawns on both sides till the water is dried(keep the lid closed while semi frying so that the prawns get tender).
10. When the prawns appear crispy, remove from the pan and keep aside.
Final Preparation:
Ingredients:
Oil: 4 tablespoons
Diced ginger: 1 1/2 teaspoon
Diced garlic: 1 teaspoon
Onion: 1 medium size (100 grams)
Turmeric powder: 1/4th teaspoon
Salt: 1/4th teaspoon
Red chilli paste: 1 teaspoon
Green chilli paste: 1/2 teaspoon
Soya sauce: 1 tablespoon
Red food colour : few pinches (optional)
Chopped coriander: 1 1/2 tablespoon
Whole green chilli: 1
Vinegar: 1 teaspoon
Cornflour: 1 tablespoon
Procedure:
1. Remove the excess oil and leave only 4 tablespoons oil in the pan.
2. Add diced ginger, diced garlic and ground fine paste of onion. Stir fry for 1 minute.
3. Add turmeric powder, salt, red chilli paste, green chilli paste, chopped coriander, diced green chilli, soya sauce and few pinches red food colour. Mix well.
4. Add 1/2 cup water to 1 tablespoon cornflour and mix well.
5. Add the cornflour mix, while stirring in the pan continuously.
6. Add the fried prawns.
7. Cook for about 1 minute.
8. Add vinegar.
9. Mix well and switch off the flame.
Ginger Prawns are ready. Serve with butter naan or rumali roti or with vegetable fried rice or zeera rice and dal fry.
