Hello again : we made this last night for Christmas dinner today. Unfortunately, the taste of ginger is so overpowering that the whole cake is going straight into the bin. Is there a typo in your written recipe and it should read 1tsp and not 1tbsp of ground ginger ?
Oh I am very sorry indeed to read this. We love the flavours of gingerbread, and we especially like it slightly more on the warm/fiery side, which is reflected in my recipe. Of course, the strength of your ginger will affect the cheesecake too, so it could be multiple things that make this too strong for you. I hope you have an alternative dessert plan and a lovely Christmas Day x

Thank you! You can leave it unbaked too if you wish, no need to bake! If you do bake, it only needs about 7-8 minutes at 180C. Remember to cool the base and tin before adding the cheesecake mix though, or you’ll end up with a melted goopy yummy mess! 😊
