Hi Guys my name is Alex Wilkie..Born and bred in Glasgow..I've worked in a few Chinese takeaways as a delivery driver for the past few years or so..Most of what i've learnt is just by watching the chefs ..
This recipe is used in Chinese takeaways shown to me by the chef in one of Glasgow's top takeaways..
Salt and pepper mix
6 and a half tablespoons of salt
6 and a half tablespoons of MSG..
If you think you are sensitive to MSG please don't use it..(FDA) consider MSG to be “generally recognized as safe..If you like Chinese as much as i do then i think you might have to change your food..Also check the labelling on processed meats, and canned goods.Food enhancer E621 as it is commonly known..Also check for hydrogenated listed oil products which also contains MSG..Just be very careful if you have any of the above issues..Supermarkets are the biggest culprits so it's always best to check..It doesn't affect me and also millions more so really it's entirely up to yourself but please remember always check the packaging if you have an intolerance...MSG is never listed as one the ingredients but always cleverly disguised..If you sitting there eating a packet of cheese and onion crisps or a plate of nachos while reading this then stop eating them immediately it's full of the stuff..Better to be safe than sorry..
3 teaspoons of five spice
2 and 1/4 teaspoons of white pepper
1 and a 1/4 level teaspoons of cayenne pepper
1 and 1/4 level teaspoons of red chilli powder
Add all the ingredients to a salt and pepper shaker
Stored in a cool place will last indefinitely
One tablespoon or more or less should be enough for each meal
Use in the same way you salt a bag of chips from the chippy..
You have to decide who much you want to use of the mix
Below is a smaller mix if you prefer to use that
Alternative mix..No MSG
Salt and chilli Seasoning
1/2 tbls salt
1/2 tsp Chinese five spice
1 tsp white pepper
1/2 tsp garlic granules
1/4 tsp red chilli powder
Mix everything together
Veg
1/2 onion sliced
1 red chilli sliced
2 cloves of garlic sliced
Half green bell pepper sliced
1 spring onion diced
1 tsp red chilli flakes
Method
Stir fry all your veg in some vegetable oil for a few minutes and then add your pre cooked chips(Oven or fried)
Next add 1 tbls of the seasoning and toss through..Done
