Got a lady eggplant there! This looks great, I love eggplant and miso. Now I just need an air fryer =D

You can make it in the oven too! I would recommend searing the eggplant in a frying pan first and then roasting it in the oven at 375f for 20-30 minutes (depending on the size of your eggplant)

I have never really known what to do with eggplant... this is worth a try. They are pretty cheap!
