My name is Jess Flowers and I'm the chef behind the blog Wild Vegan Flower.
This page is dedicated to showcasing plant-based recipes with an emphasis on local and seasonal ingredients, including wild and foraged ingredients!
Many of the recipes here are for slow living where we make sourdough, we ferment, and we make pasta from scratch.
You might know me from my viral flour washed seitan recipes, I take my plant-based proteins seriously!
As a chef I like to push the creative boundaries of vegan cooking while considering how that applies to the everyday home cooks

The soy bean pulp left is OKARA. The okra is a specific vegetable sth between pepper and cucumber. I LOVE IT by The way.

This is a high protein food that anyone can eat. Vegetables are a great part of a balanced diet but it’s also important to have sources of protein in addition. Hope this helps

Animals are friends not food. Not to mention what animal agriculture is doing to our planet, but many studies show lower meat consumption leads to a longer life and less disease. That’s why I love seitan, it tastes and has a mouthfeel like meat, but doesn’t harm the planet, the animals, or my health!

My grandparents are farmers and I grew up visiting their farms in Minnesota. Yet I have read multiple studies comparing animal agriculture to growing vegetables and see all the studies say that it takes less land, water, and emissions to grow plants. You have to grow food to feed animals then kill them, you could just grow food and eat it directly. I would be happy to message you some resources if you want to see what studies I’m looking for. There’s also lots of documentaries that go into it with more depth. What the health, cowspiracy, forks over knives, and seapiracy are all great documentaries that also mention the studies I’m talking about. You’re right I’m the black sheep of the family because they are farmers and slaughter animals. I grew up with dogs and cats as part of my family and don’t see a difference in intelligence with cows. I like being a friend to animals. The way we treat sentient beings like products is disgusting and a stain on our humanity. As a vegan who loves farmers and supporting my local famers I think it’s important to respect all sentient life.

Lebanese American, grew up with labne and went vegan about 4 months ago. Thanks for showing that this delicious staple can also be vegan! Haven't had great success making my own vegan yogurt yet, but I'll get there eventually.

I recommend using soy milk when making yogurt because it’s so high in protein. If you look at my other video where I compare milk makers vs the blender I test the quality of the milk by making each batch into labneh. I go into more detail about making yogurt- I also have a yogurt recipe with lots of information on my website 💛

Wow, can we just have a cooking show where we talk about labneh cheese without getting into all this nonsense about Palestinians and Israel? For somebody who seems to want inclusion and freedom, you’re doing the opposite. It seems that you’re adopting your views based on nothing but appearances. You follow the gravy train with your transgender, nonbinary left-wing ideology, and here you are spreading rhetoric about Palestine and Israel without fully understanding the issues. You probably get your news from watching left-wing algorithm-driven RU-vid videos. I truly came on here just to see how to make vegan cheese. How unfortunate to see that someone who is probably a white hillbilly, doesn’t know anything about city life, and has probably never even had black friends, is the one giving out this information. Your concern with irrelevant issues ignores the significant history of Jewish people who have been expelled from numerous countries and have managed to create a thriving nation in Israel. Your understanding of this history appears lacking, influenced by woke leftard misinformation. And for the record, the claims about Israel committing war crimes and killing children are not grounded in a full understanding of the complexities of the situation. It's important to seek out factual information from reliable sources rather than spreading misleading rhetoric.

For those of us who don't have the best hand-eye coordination, would braiding the seitan instead of knotting it be okay?

You can certainly braid it! I recommend twisting each strand when you braid it to help build tension so the strains are more distinct and you’ll have a better texture. The main reason you knot or braid it is to help create tension. Otherwise your seitan will have a lunch meat like texture and not a shreddy chicken like texture. Which if you are going to thinly slice your seitan for lunch meat you don’t need to braid or knot it at all

Check out my video on making soy milk! I made three batches of labneh to test the thickness of the soy milk. It’s something I make regularly since it’s probiotic and tastes great

How do you ferment potatoes and use the leftover brine?

Here’s my recipe how to do it! wildveganflower.com/fermented-potatoes/ I typically reuse the leftover brine for the liquid portion of vegetable broth! I make homemade vegetable broth from my veggie scraps and use my brines or aquafabas for the liquid portion

Nah, I don’t like the way it tastes and it’s harder to digest. I used to make it that way before I learned this method! Once you learn how to wash flour, you’ll never go back. At least that’s the case for me!

@jess.flowers fair enough, when I washed the flour I felt shocked by how much waste it produced and felt the taste and texture weren't as chewey and it took a massive amount of time so was inaccessible for me x

Try and ignore it. Create your own group. Watermark the images. It's not worth the energy worrying about it. Everything in the public sphere gets reused and repurposed.

Have you tried to "boil" the milk in the vitamix? What temperature does the milk have to reach? Thanks.

I found it you cook it on slow cook it doesn’t stick to the bottom. That’s my main reason for not cooking it on the stove- it always burns or sticks to the bottom on me!
