Gluten Free Chiffon Cake
5 Eggs (58-60 gr. each with shell)
115 gr. Rice Flour
46 gr./ Corn Flour / Corn Starch
110 gr./ml. Whole Milk
70 gr./ml. Vegetable Oil
1/2 tsp. Salt
1 tsp. Baking Powder
1 tsp. Vanilla Essence
100 gr. Fine Sugar
100 gr. Fine Sugar (for the egg whites)
Preheated Oven: 160°C
Baking temperature: 160°C
Baking Time: 50-55 minutes
Baking time may vary depending on the type and accuracy of your oven.

After weeks of experimenting, this is the best and what I can come up with. I am not a vegetarian, nor gluten free person. I hope the gluten free viewers will like what I created for them. I didn't cut short the meringue and the folding parts in this video, so you can see how long it took me to whisk the egg whites and folding it into the batter. Good luck and success.

Dear Michael, I am a Coeliac 15yrs now. I only recently took up baking due to the COVID hard lockdown and have tried your gf sponge and now this. Words cannot express my gratitude for you. For the time and attention to bring something special to us to enjoy. Recipie works out PERFECT, soft, fluffy and oh so tasty. I turned mine in to a triple layer with your decadent butter cream frosting (with meringue ). There is nothing typically gf about this. Not the taste, not the texture. It is simply AMAZING! You have brought me much joy. 🙏

Oh my god. This video. This man. It is so hard to find good gluten-free recipes that don't call for weird expensive things and are also vegan/organic etc. You are my favourite person. I definitely need to make this someday. I will dream about this cake forever!

OMG! I am eternally grateful to you!!! I am not Asian but I work in an area in that has a huge Asian community. I suffer all day long not being able to eat at any of these restaurants. There’s even a dumpling house that won a Michelangelo star several times! But what gets me the most is seeing all of these AMAZING bakeries! I always drool at the piles and piles of chiffon Cakes!! I haven’t tried this yet but I think I am attempting this tonight! 😋 will let you know how it goes. Also, this really was very satisfying to watch, so I’m glad you didn’t slow it down. Thank you!!

Mr. Lim, a simple "thanks" can never be enough to show my love and gratitude to you. 💖💖 I desperately searched for gf cake recipes for my baby. Now I know that I can bake him his beloved sponge cake whenever I can! You know, my family love to eat light, airy cake and it is really sad not to be able to make those without gluten. I made this cake. He uses Jumbo eggs (Extra large) and the temp in fahrenheit is 320 degrees. I am amazed on the lightness of the cake. Using another recipe together to make a Strawberry Shortcake. Wish me luck Edit: Delicious! Super light fluffy

Should the pan be greased n dusted with flour? Asking because for some chiffon cake recipes the cake needs to hold the pan to rise up and not be dusted. Thanks

Thank you so much for this simple recipe because almond flour is difficult to find in my country. But cornstarch, tapioca, rice flour is easy to find. I'm a totally cake love & when I eat cake made of wheat my face start to itch really bad😔. So thank for your recept, please make more gluten free pastery or cakes😊

Thank you so much for sharing this recipe. Baked my 1st gluten free cake yesterday and it turned out very well, bouncy, taste and smell so good. Gluten free products are so limited and costly to buy them. Though using rice flour taste a little grainy compared to wheat flour, I am so grateful to have this recipe as I am allergic to gluten. A perfect recipe👍 although I did not follow the exact amount of ingredients according to the video, the end result was great. Fluffy texture. I couldn’t believe with gluten-free flour, I can make it. I wish I could post my pictures of the cake.

This receipe is perfectly good. Thanks for the gluten free recipe. But think its a bit sweet. Need to reduce the sugar.

Michael, you are an angel, thank you. To make this recipe DAIRY FREE / LACTOSE FREE - I have replaced the whole milk by half pistachio milk (137 degrees brand) and half coconut milk (Suree brand). The texture of the cake was the same as in the video, perhaps slightly thicker. I've also made this a Pandan version by replacing the Vanilla Essence by Pandan Essence, 1tsp. But the flavour was too light, I would recommend 1.5 or 2 tsp.

I made this cake yesterday, and it came out AMAZING. This is going to be my go to recipe for my European sponge cakes, even if I'm not going gluten free. Texture was moist and light. Do you have a chocolate gluten free version? Thank you!

I made this, and it was to DIE for. I iced it with swiss buttercream and it tasted like a twinkie! (but better of course). Gluten free sucks, but this is amazing. I was wondering, could I do this as cupcakes? If so any tips? Also, could I substitute cocoa for the cornstarch to make it chocolate? Thank you so much for your hard work and excellent tutorial!!! :)

I am looking for a lemon chiffon cake recipe and this one looks great! Has anyone added some lemon juice into this cake to make it a lemon cake?

Adding lemon juice to a lemon chiffon cake is a great idea to enhance the lemon flavor! If you decide to try it, you might want to reduce the amount of other liquids in the recipe slightly to balance the extra liquid from the lemon juice. Additionally, adding some lemon zest can intensify the lemon taste even more without altering the texture too much.

​@@michaellim Hello Michael! Thank you so much for your answer!!! I just made the cake: I added 2 TBS of lemon juice and 1 TBS of lemon zest! And remove some of the milk. (I use almond milk for that). It came out great. The texture is really spongy and smooth. You can't tell that it's not wheat flour. :D Thank you for the good recipe. ❤ I reduced some sugar because I want to frost it later with some butter cream. :D

Is this supposed to have vinegar in it too? There is no acid for the baking powder in this recipe.

No vinegar for this recipe. You can add it if you want too, but not necessary.

Hi Michael, I made this gluten-free chiffon cake a few days ago. I use your other chiffon cake recipe with the no fan mode for 75 minutes and fan mode for 20 minutes, it came out very beautifully, no crack. But one problem I face is (on both times) when cool down the top layer (the brown part) just separate apart from the cake, like a full piece of "skin" come off the cake. Do you know why?

That is normal, for a recipe calls for high quantity of wet ingredients. Some people are not bothered by it, because the cake has to be placed up side down. The best you can do is dry the cake a little further by baking it a little longer.
