We enjoyed these gluten free cookies - soft and fudgy on the inside. Used almonds instead of walnuts and added mini chocolate chips for more chocolate taste.

can i use coconut sugar and almond milk???

I haven't made using these ingredients but I don't see why it wouldn't work. Just a few notes: I would use a full-fat almond milk. Also, the coconut sugar I can get here is not as fine as granulated sugar. When I've used it in the past I blitzed the sugar in a food processor to resembled granulated sugar .
