I tried this recipe yesterday and it was delicious! However, I used monk fruit as the sweetener but during baking my loaf had this clear liquid (I’m assuming it was the sweetener). I’m new to gluten free, low carb eating. I’m prediabetic and enjoy sweets. Do you know anything about monk fruit (or can suggest a replacement that works with your recipes?). My loaf shrunk to 1 1/2 - 2 inches but was still eaten with strawberries and blueberries and cream! Tasted yummy!!!
I'm so sorry, I am not (at all) knowledgeable about baking with monk fruit or any sugar-free substitutes. You could try a keto youtube channel and see if you find anything worthwhile.
