Even though I don't have any allergies i would still eat those recipes and it's cool that Nicole did recipes that are free from soy, gluten and nuts because it shows that Nicole doesn’t just care about herself but others especially your viewers. So good!!! The trick is to use very very ripe bananas. I cut them into ice cube sized pieces before freezing so it’s easier, and make sure they’re totally frozen before blending so the ice cream will be really thick and smooth 🍦🍦🍦 You’ll have to scrape down the blender a few times to make sure it blends completely but let it keep going until it’s thick and creamy. Its like magic and so delicious! Hope you love it!

@@1auntievenom oh no! I love it because it's pure protein and since I'm training a lot my diet requires more protein than the average so for me it's literally a life saver.. but for people with gluten intolerance or celiac disease it's the worst of course 😓

Nuts and tofu are often used for vegan cheese sauces so my favourite soy-free/nut-free things to make are the potatoes and carrots cheese sauce and the cauliflower Alfredo sauce. Connie’s RAWsome Kitchen has interesting aged cheese recipes using potatoes and rice instead of cashews. As for replacing soy, I know it is possible to make tempeh from chickpeas or lentils, haven’t tried yet... My favorite flatbreads are quinoa flatbread and red lentils flatbreads, both gluten-free and delicious. X&o from 🇫🇷
I so appreciate this video! My list of food allergies is extensive but top of the list is coconut...both oil and milk/cream/fat. I can tolerate just a little of the oil but am so fond of breathing that I must avoid all else! Even more extensive is the list of things I just don't like either for flavor or texture like bananas and cilantro. I can't have tree nuts and must limit soy consumption...so becoming plant based was a challenge but because I grew up in a vegetarian household it was an easier transition. My father worked in the Chicago stockyards in the 30s and never touched or ate any animal product after that and rarely ate any dairy so close to vegan without the label. I make it work but it is a challenge so any time a vlogger makes an effort to include those of us allergic ones, I am grateful! Now if you could help me figure what to sub for coconut oil in that magic yumminess...you would be my shero!! thanks for all you do and teach to build us all a better future!

I have made magic shell with just the enjoy life brand chocolate chips, it still gets that hard/crackle effect. My family doesn’t like the taste of coconut oil or cilantro at all...I always switch up recipe ingredients to suit:). Glad you are able to find options for your special dietary requirements. Nikki does such a good job of being inclusive with her recipes:)

I was diagnosed with celiac disease and diabetes type 1 at age 10, so I had restrict at a pretty early age. When I went vegan last year I was prepared that I had to cut a lot of my favorites out of my diet. Seitan, couscous, bulgur, spelt and some oat products are pretty much the only "typically vegan" foods that I can't eat. It's probably a lot harder to be a vegan with soy allergy. But it's still possible :)

@@jbell9179 well it's mainly vit k2... But if you eat nattos ..you shouldn't be worried about that.. infact nattos can add 10 long years to your life.. But not everyone ,myself included, likes eatin nattos (I eat it nonetheless)..but if you don't...then you need vit k2 supplement

Oh my goodness, that nice cream with magic hard shell looks divine! I'm definitely trying that! 😋💜 And you are totally right about needing to start making dinner when the thought of grazing hits, because once I start grazing my motivation to cook a proper meal disintegrates quite quickly. If I make a proper meal without snacking too much beforehand, it is so satisfying and delicious. I've also got to try that pineapple topping recipe! It looks very versatile as well as tasty.

This challenge was 6 months of my life trying to figure out food allergies. Happy to say I can have soy and gluten :) but I can’t have any nuts or tahini which can make things really really difficult going anywhere vegan or following recipes! :( Thanks for bringing more light to food allergies! I also am allergic to buckwheat. Weird one I know. Also not an issue since I am mostly vegan (can’t give up seafood yet) but I am allergic to egg and then lactose intolerant.

I am a vegan chronic kidney patient, and I am on a low protein diet because of it. It is actually hard to stay low enough, even as a vegan. You are getting plenty of protein people ;)

I have fructose intolerance and I want to be more plant based but so much vegan food has fruit, (as well as gluten and soy). My honey alternative is sweet brown rice syrup, but it's hard to find alternatives to actual fruit in recipes. Your video did give me some ideas so i appreciate you doing this challenge!

I hear you I also have all these allergies plus others and crossreavtivity. @Nikkivegan it would be great if you could do this again but with the additional restrictions of no peas including pea protein, lentils or chickpeas as typically individuals with a soy allergy have these ctoss reactivities.
I understand the idea of protein powders as being useful for those who are transitioning to a vegan diet, but I think they are ultimately a processed food and therefore less desirable. This focus on protein in vegan diets to me is strange to me, but I went vegan 21 years ago.
Hey nikki! Just wondering how many calories this would be roughly? Looks like you are eating lots of food but it's very calorie dilute.. I feel like this is would only maybe be 1500 calories? Definitely not enough! Please correct me if I'm wrong x
No way! I would be so hungry lol I track my intake on Cronometer and routinely get between 2100-2400 on an average day. It's hard to tell portion sizes on screen but on average day that the range what makes me feel full and satisfied. We're all different though so I try not to focus on numbers in my videos 😊😊

Great ideas. Watch out how many chickpeas you eat. They are loaded with estrogen per my nutritionist. Estrogen dominance causes cancer. I am doing vegan diet for estrogen dominant cancer. Birth control is estrogen dominant too. Wish I had known this at your age to prevent cancer.
I really appreciate you doing a video like this but I think you should be mindful of the wording. It is not a challenge for those of us who have to eat this way it is how we have to eat every day.

So I made this “challenge” for myself to create recipes that aren’t just gluten free or soy free or nut free but all three. It was meant to be a fun thing, I guess I could have made that more clear. Love your videos Nikki, and I was excited to look up the ritual powder.... but come on... 36$ for a pound, AFTER the 10% discount?! I have no issue with sponsorships or expensive products in general, but promoting an insanely expensive product like this within a video that’s supposed to show that veganism is accessible seems a bit tone deaf.
Hey 👋 I hear that! Like I said in the video, there are a lot of ways to get plenty of protein on a vegan diet and many of them are incredibly inexpensive like beans and whole grains but this is just another option for anyone who’s interested. It’s within the typical price range of other similar products but I think it has better ingredients so it’s a great option for those in that market. Plus there’s 15 scoops per bag, and I used 1/2 scoop in the recipe so there’s 30 servings in the bag if you’re using it to make overnight oats and that ends up being right around 1 dollar per serving. Like I said, 💯 not something one must have in order to be vegan but I wanted to show that there are lots of options including the four recipes I shared in addition to this product in the video. Hope that helps you see where I’m coming from 💛💛
