Goan Mutton Roast / Roast Mutton Recipe
For the marination
1/2 kg mutton
1/2 cup fresh coriander leaves [ kothmir ]
2 green chillies
1/2 lemon
1 inch ginger
15 small garlic flakes
1 tsp freshly ground pepper
Salt
2 tbsp ghee
Grind the masala as shown to a coarse paste and marinate the mutton for 1/2 - 1 hour. Heat 2 tbsp ghee and add the mutton and sauté till the oil separates,then add 1 1/2 cup water and pressure cook the mutton on medium heat for 4 whistles, then on a low heat for 20 minutes. Put off the gas.Allow the cooker to rest for 10 minutes, then open the cooker and boil off excess water if any. Leave a little gravy. Keep aside .
Other Ingredients
Grind to a fine powder
1 tsp cumin seeds
1/2 tsp fennel seeds
2 star anise
2 badi elaichi [black cardamom ]
1/4 nutmeg [ jaiphal ]
1 mace [javantri ]
5 cloves
4 cardamoms
2 cinnamon
3 medium onions sliced
1 tbsp coriander powder
Heat 1-2 tbsp oil in a pan, add the onions and sauté till translucent . Add the cooked mutton with the gravy also add coriander powder and 2 tsp garam masala powder . Sauté as shown in the video. Serve hot with fried potato chips .
