Sweet Potato Bebinca Recipe by Fayola Da Costa
Ingredients:
400gms sugar
500gms mashed sweet potato
4 eggs
1 1/4 cup coconut milk
150 gms flour
1 tsp cardamom powder
Ghee (if layering)
Food colour (optional)
Mix together sugar and mashed potato. Add the eggs one at a time. Mix in the coconut milk. Beat well till the sugar dissolves. Fold in the flour and elaichi powder.
The whole bebinca can be baked in the oven if desired or baked in layers using top heat as shown in this video 😋
