Goan Doce Bhaji
1/2 cup fine broken wheat ( Dalia )
1 cup water (warm)
2 cups coconut milk
1/2 cup jaggery (finely chopped)
1/4 tsp salt
2 tbsp + 2 tsp ghee (clarified butter)
1/4 cup chopped cashew nuts
2 tbsp raisins (kismis)
1/2 tsp cardamom powder
1/4 tsp nutmeg powder
1/2 tsp vanilla essence
Method
Heat 2 tsp ghee and roast the cashew nuts till pink. Then add the raisins and sauté them slightly and keep the dryfruits aside to cool.
Heat 2 tbsp ghee and add the fine broken wheat. Sauté the Dalia till it turns golden brown. Add a cup of warm water , give it a stir and then add the jaggery. Cover the pan and allow the jaggery to melt. Once the jaggery has melted, add half the amount of coconut milk, cover the pan and on a low heat, cook the doce bhaji till it thickens. Then add the remaining coconut milk , cardamom powder, nutmeg powder and vanilla essence. Cover and cook on a low heat for about 10-15 minutes or till the doce bhaji thickens. Add the dryfruits , turn off the gas and close the lid and allow the doce bhaji to settle for 10 minutes. Empty the doce bhaji in a container and garnish it with the remaining dryfruits. Enjoy .
