PRAWNS BALCHAO
Prawns 1 kg
Salt. To taste
Turmeric powder. half tspn
Onions. 2 med size
Garlic chopped. 1 tblspn
Vinegar. 1 cup
Sugar. 3 tblspn
Kashmiri red chillies. 12 each
Garlic peeled 10 cloves
Ginger. 1 inch
Turmeric powder Half tspn
Black Pepper corns 20 each
Cumin whole half tspn
Cloves. 6 each
Cinnamon stick 1 inch
Oil. to fry

You have to use Kashmiri chillies , they give nice red colour and less spiciness.

What is the reason for adding onions? I prepared it. But looks very thick. Couldn't add more vinegar as it would be too sour. So can i add a little oil. Made nicely hot and then cooled.

Hi chef. I prepared mole. Cooled it completely and then stored in a glass bottle with plastic lid and kept in the fridge. But why does water collect from the inside of the lid after sometime. So layered the lid with a tissue paper or else the droplets will drip in and spoil it. Any other way ?

A question Chef Pinto... Most Prawn Balchao recipes, I've seen, also grind the Onions with the masala resulting in a smooth paste.. you saute the onions separately, which would result in a grainy texture. Is that a normal Prawn Balchao texture - grainy not smooth?

The cinnamon piece looks much bigger than two inches, how come the chef says one inch cinnamon?

As you can see the cinnamon i have used is flat piece. What you get in market is roll pieces . Hope this clarifies.
