Goan Prawn Pulao with Veggies | One pot meal | Sungta Pulao
Try this tasty green Pulao with shrimp and Veggies, also called Sungta Pulao in Goa.

Serves: 5
Ingredients for Green Prawn Pulao:

Rice: 3 cups ( US standard measuring cups )
Whole Spices - 1 cinnamon stick, 8 cloves, 5 cardamom, 10 peppercorn
Boiled Water - 4.5 cups + 1/2 cup
Salt - 2 tspns
Onion - 2 medium, chopped
Veggies - 1 cup each of carrots, green beans, cauliflower. 1/2 cup of peas
Oil & Ghee - As needed
To Marinate:

Prawns - 26, jumbo
Turmeric powder - 1 tspn
Salt - 1 tspn
Green. Masala
Green Masala: Make a paste
-----------------------
Cilantro - Big bunch
Garlic - 5 cloves ( Note Indian variety is smaller than US )
Ginger - 1/2 inch
Green Chillies - 3 (adjust per spice tolerance)
Water - 1/4th cup
Method:
1) Wash & drain rice. Set aside for 30 mins.
2) Marinate Prawns with ingredients listed in 'To Marinate'.
3) Heat oil over medium flame. Add whole spices & let them splutter. Add onion & fry until translucent.
4) Add marinated prawns and fry for 2 mins.
5) Add veggies & fry for 2-3 mins.
6) Add rice and mix well. Add salted water, mix and cook covered on medium low flame for 10 mins.
7) Mix gently, cook covered for another 5 mins.
8) Switch off the flame. Keep covered for 20 mins after which you may fluff the rice with a fork and serve.
Note:
1) Use a thick bottom pan for this recipe.
2) Cooking time will vary based on the amount of rice used. Less quantity will get done sooner like in 8-10 mins.
3) Use aged basmati rice. Fresh harvest of rice absorbs more water and can turn mushy quickly.
