Gobi or Gobhi ka paratha is a must-have Punjabi breakfast meal. Parantha is made throughout India and is loved by all. There are many variations on how to perfectly cook paratha and you can choose to stuff of your choice. Stuffed bread or stuffed flatbreads are a hit with all & you can spice them up the way you want.
Winters is about good quality cauliflower and when used as a stuffing for bread they taste yum.
You can eat these tasty paranthas for breakfast or all day.
Serve them with butter, pickle, and curd or lassi (yoghurt smoothie).
INGREDIENTS -
For the dough
Whole Wheat Flour (atta) - 2cups
Salt - generous pinch
Oil - 1tbsp
Water - as required
For the filling -
Cauliflower grated - 1¼ cup
Onion chopped - ¼ cup
Ginger chopped - 2 tsp
Green chilli chopped - 2 tsp
Cumin - ½ tsp
Coriander chopped - a handful
Coriander powder - 2tsp
Chilli powder - 1tsp
Salt - to taste
Ghee/oil - for basting

Kunal I love your recipes. I'm european that spent quite some time in India. Learned how to cook Indian dishes, how to make tadka and all... But my hindi si still quite bad. It would make me verry happy if you included subtitles or did your videos in english. Gobi and Alu paratha are still my favourites. But my favourite breakfast dish is poha. North-west Indian poha. But all Indian pohas are great. It's just great breakfast dish that you can make in many styles so that you don't eat same poha all the time.

my mum always used to make it with ghee ( you reminded me of her ).., but i make it with oil.., no wonder that classic taste is never there..,from now on I’ll use ghee..thanks for reminding me.. paratha is an enjoyable item

You should always use ghee. Ghee is very very good for your health. It's a myth that oil is better. On the contrary most oils and even excess of good oils are toxic to our liver. Carbs like parathas, roti and rice must be eaten with ghee.

Dont u have to clean gobi by putting in hot water and salt to de-worm it ? I cant even imagine grating it like that before de worming it

My mother in law always uses softer dough for any filled paranthas. I also do the same now. It works out well. For mooli and gobhi paranthas, you can also add salt in dough itself so wont have to add much salt in stuffing.

But you need to wash the cauliflower first and then wait to grate it. Otherwise it will have moisture. Very important point.

Instead of grating the cauliflower, my mom told me to first boil the cauliflower. This made the cauliflower super soft and easy to mix in the batter with atta and masalas. No matter what the chefs tell you, moms already know a modified version of the recipe. Please don't think that I doubt your expertise Chef Kunal. My family is big fan of your recipes and watch your videos on youtube as well as tv.

No. One should not boil any vegetable for that matter. You are killing all of its nutrients.. what are you eating then? Just a pulpy and nutrition less gobhi??? Sorry. The procedure you mentioned is absolutely, never to be followed

Love the recipe! You make cooking seem very easy! But just wanted to know , is it ok to not wash the Gobi before grating it? As most of the times gobi is known to cause stomach upset if not cleaned properly before use.

Our favourite- Aloo parathas, followed by Kheema parathas, followed by Mooli, Gobhi, Bandgobhi, Methi, Palak, et al, and leftover bhaji parathas too. My late Mom made the bestest parathas, each one puffed. up beautifully - i love you Aie❤️ wherever you are, a million kisses- and now the best place is our home where i makethem for my husband and young son! Gobhi paranthas are my favorite. I add salt to the grated gobhi, set it aside, then squeeze out the water. Like its done for mooli paranthas.

Earlier I used to make it with cooked stuffing and dove without oil and with that method parathas were very delicious , but when I used your way of cooking it " Maja Nhi Aya"🙄

I was your biggest fan but sometimes i feel your recipes dont work well. Tried this gobhi paratha but to be honest this recipe didnt work well. Gobhi should be stir fried before filling otherwise the taste is complete raw once the paratha is prepared which kinda tastes v bad. Wont recommend anyone for raw filling. Big mistake

Absolutely did not work, the taste was great but the stuffing had water oozed out and it was so hard to roll. I Evan squeezed the water before adding salt thinking it won’t be that bad but I should have followed the traditional way of leaving it with salt. The tips didn’t work for me either. Thanks for the taste though.
