RECIPE for Shangi with cottage cheese and green onions.
15g fresh yeast.
30g sugar.
200 ml warm water.

Form the dough into a ball.
Grease a bowl with vegetable oil.
Place the dough in a bowl.
Cover the dough with cling film.
Let the dough rise in a warm place for 1.5 hours.
For the filling:
Chop 40 g spring onions.
320 g cottage cheese.
Squeeze excess moisture out of the cottage cheese through a sieve or cheesecloth.
Add salt to taste.
1 chicken egg.
Mix everything well.
Add onions to the cottage cheese.
Mix everything together.
The dough turned out well.
Dust the dough with flour.
Knead the dough with your hands.
Sprinkle the table with flour.
Place the dough on the table.
Divide the dough into 6 parts.
Form each piece of dough into a ball.
Cover the dough balls with cling film.
Leave the dough on the work surface for 10 minutes.
Divide the filling into 6 parts.
Form each piece of filling into a ball.
Sprinkle the table with flour.
Roll out the dough ball with a rolling pin.
Make slits in the dough.
Fold the edges of the dough like I did.
Do the same with the remaining dough.
Repeat after me.
Place the rolls on a baking tray lined with baking paper.
Cover the buns with cling film.
Leave the buns in a warm place for 15 minutes.
Put the filling on the buns.
Press the filling with your hand.
Spread the buns with a mixture of 1/2 chicken egg and 1 tablespoon sour cream.
Bake the rolls in an oven preheated to 180°C for 20-25 minutes.
