Sa visayas at mindanao lechon recipe ay maalat-alat at punong puno ng timpla kaya suka tlg ang partner specifically spiced coconut vinegar. Mas nakakawala ng umay ang asim ng suka i-partner sa lechon na maalat-alat at mamantika compared sa lechon sauce na manamis-namis. Dating naka tira ako sa may La Loma Quezon City, hndi mananalo ang lechon sa La Loma compared sa lechon ng visayas at mindanao.
