The Chinese Kung Fu Tea Ceremony, or Gongfu Cha, is an ancient Chinese functional art form. The exact origins of the Chinese Tea Ceremony are unknown, but the Chaoshan/Chaozhou region is credited with making it a part of daily life. There are officially 21 steps to the process, though following the steps is more of a meditation than a practical way to serve tea.

The name of the ceremony is a play on the words Kung Fu, based on the methodical steps that are required to properly perform the art.
Unlike the more recent Japanese Tea Ceremony, the Chinese Gongfu Tea Ceremony focuses not on the ceremony itself, but on the proper preparation of tea.

This is for me personally by far the greatest chinese tea ceremony to watch: So calm, no „star attitude“ but in a very nice, decent and calming way for the viewer. Thank you for broadcasting this. ✌️🫖🍵☕️

@@cainatea2829 I guess it depends on the definition used. In the formal sense: "a religious or public occasion, typically one celebrating a particular event or anniversary" it would definitely be situational. But the informal definition: "an act or series of acts performed according to a traditional or prescribed form" being that gongfu is a process with lots of steps made with intention behind each one, it's definitely a ceremony. You can't brew gongfu running out the door because you're late to work like you can with Western style.

Hypnotic. While I would love an explanation of each step of the ceremony, not knowing why she is doing what she is doing adds a layer of mystique to the entire process.

This was a very good education, in the use of making tea. As I will normally steep my tea for over 15 minutes, plus will never throw away the first steep. As again I will always drink my tea as it... After, watching this I am going to do this for my teas. 20 second steep, throw away, then 2 steep to drink after 20 seconds. Thank you for sharing.

I used to think seeping for longer was better. But now I see a 15 minute seep as crazy long. Most tea leaves give out their best flavours in the first 30 seconds to 1 & a half minutes. A single seep that lasts longer than 2 minutes is usually bitter, no matter what the tea.

How do you clean the teapot afterwards, please? Just rinse it in cold water until all the leaves are gone?

Knallbart Hot water is best. Chinese terracotta pots are unglazed on the inside by design. They are meant to be porous so the flavors absorb into the inside walls. For this reason, people often like to use only one tea, of the darker varieties, to season their pot. It's commonly believed that using only a single tea in each pot will improve the flavor over time. So there is no need to wash them, and never use soaps because the flavor of the soap will remain. Also, if you're worried about stains on the pot, that is also part of the seasoning process. Get a small brush and "paint" the pot with the liquid tea to get an even patina over the years.

Knallbart, zuerst den Tee aus der Kanne mit einer hölzernen Pinzette entfernen, und dann die Kanne mir heißem(!) Wasser spülen. Danach gut trocknen lassen. Sonst nichts.

Jason Jay Thank you. That sound is normal. It's the water draining down the tube to the bucket below. That's what happens in real life. One can't allow the excess liquid to keep building up on the table.

AliExpress has a big variety of good quality tea trays & Gongfu tea items for very reasonable prices (mainly because it comes straight from the Chinese manufacturers and also because a lot of Chinese businesses that usually only sell items inside China sell on it)

When initially infusing dried tea leaves, they need to be "woken up". A quick splash of hot water over the leaves washes away any staleness that may be present on the dehydrated leaves.

Felis Tigris It's a way to warm up the teaware so the leaves infuse at full temperature. You don't want to brew in a cold teapot. That's why the table is there to drain the water away.
