A lot of pizza in NYC has become either dollar pizza or gourmet artisan. The old school simple but amazing slice shops are few these days.

A lot of NY pizza is better in New Jersey. Connecticut too. Boston has great pizza and I'm from New York. A lot of places in Chicago perfectly replicate NYC slices. Water in NYC is softer than most places but many people have water filters these days that soften water.

Very true. If I wasn't clear enough about it in the video, "It's gotta be the water" is the weakest argument for why pizza, bagels, bread, etc are not good in other places. Even hardness/softness to me (a chemist by trade) is flimsy and IMO negligable aside from some extreme examples.

@@derryXDINES The water argument is no longer valid because people have home filters that soften water. The thing is people got to have passion for what they do to make great pizza. There was a great pizza shop near me and the owners sons took over and the quality went downhill because the sons just saw the pizza place as a job and had no love for it other than it paying their bills.
