4:54 - She IS actually right. Different varieties of potatoes can be very different - some make amazing chips, some are never going to properly crisp up. BUT that's why, if you want to serve great chips, you find what varieties available in your area actually do so, and then make sure to source those. Generally, these are called starchy or floury potatoes. What you don't do is buy a bag of waxy potatoes then complain they make soggy shitty chips... 🤦‍♂️ I think Denise is a perfect example of the Dunning Kruger effect - she thinks she's smart because she realizes different batches of potatoes are making different types of chips, but she's not smart enough to realize they're different varieties, and that she should find the best one and source that for consistent quality chips. Ironically, something any potato farmer could probably have told her... 🤣

He’s always so nice to the staff.

I actually went to Cafe Hon a couple of times after Gordon was there... they kept the changes in place for a long time but the last time I was there they had already repainted the walls to some ugly brown color and taken out much of the decor that Gordon's team had put in place. Also, the menu was reverting back to the old one- if I recall correctly the oversized big bay club with the questionable shrimp was back. When I saw that this place was reverting to their old ways I never went back.

if your serving "british fish and chips" don't call them French fries, in Britain they are chips.
