White cheddar and Monterey Jack Mac and Cheese with Paprika and Cayenne and some chives on top is good but that home made exclusive, and I like mine Spicy. Whatever pale Mac that was it ain't happening.

Yeah and Josh made a video calling out Ramsey's shit grilled cheese that was not even fully cooked through or melted right after this video. He called out Ramsey hard on how badly Ramsey failed at making a simple grilled cheese.

If you look at foil, it has a shiny side and a dull side. However, despite many cooking resources citing which side of the foil should be up or down, tests have shown that it doesn't matter. Cooking times and temperatures do not change no matter which side you use. This is, of course, for regular foil. Non-stick foil is different. On non-stick foil, the non-stick coating is applied to the dull side of the foil.

20:00 non-stick foil can be upside down. I think that’s what he’s talking about. Not sure if there’s something like that with regular foil or not. You can tell on non-stick because the letters are reversed on the side without the coating.

*Foil* = dull side to food *_ALWAYS!_* Don't care what Reynold's says about it not mattering with _their_ product. Years of experience speaking here (Gordon seems to concur): when the bright side is used toward the food, it does something odd ... the taste can get yucky AND the color of some foods will change ... especially when storing with the foil making physical contact, like no container & wrapping the item. Also, if you use foil as the 'lid' to a baking dish or pot with the bright side down, the heat can cause a shift in flavor/color, depending on how acidic the food is. This is especially true of manufacturers other than Reynold's. Not to mention the new nonstick foils... they _have to be_ dull-side to food 'cos that's the slickery side. So, keep it dull and you can't go wrong. :)

In several areas in JapanSome examples are Matsusaka beef, Kobe beef, Yonezawa beef, Mishima beef. Must food list Waygu ( Try a Hot Pot Restaurant) waygu practically melts in your mouth. Aluminum Foil: most resources say the shiny side should be down, some newer sources say that it makes no difference which side of the aluminum foil faces up. I do shinny side away from food.
About the foil: there is a side that is more matte and one that is more shiny. If you’re baking or defrosting, you have the shiny side facing food and the shiny side faces away from food to reflect heat away when using the foil to reflect heat away from your food. (Pretty sure that’s right, anyway. Lol)
I cook something i call a breakfast Wellington. I kinda came up with it after watching a lot of Chef Ramsay. It's an egg wrapped in sausage wrapped in duxelles and bacon.. The sausage has green peppers and onions in it. Wrapped in pastry. Trick is to undercook the egg and peel it so its not overcooked when you cook the sausage and pastry. Took a few tries to perfect and keep it from being to greasy... I need to tiktok or youtube the cooking of it.. See if he will respond. Almost perfected
Keep in mind Gordon trained under French chefs most of his career so the vast majority of his standards are derived from antique recipes. Gordon's eggs are actually a very old style of recipe that got pushed to the side for faster and more efficient but generally less flavorful recipe. Example a fried egg vs Gordon's old school creamed eggs... or even Gordon's creamed eggs vs scrambled eggs... they are all just as good and I'm willing to bet that there are a lot that even prefer eggs many different ways. I personally like to change it up sunny side, scramble, over easy, poched... my point is people give way to much notoriety to Gordon for creamed eggs.
I've personally never noticed the difference having my foil shiny side up or down compared to dull side up or down but ppl do say that shiny side up reflects heat... Idk!

People blame the obesity crisis on fast food, but I'm seeing more people dying mixing pre-made goop in a bowl and saying it's good food. I'd serve that person a deep fried battered chux wipe and they would likely say what a tasty piece of meat that was and wash it down with a ranch dressing mixed with a blended beer coaster.
I used to make cheesecakes almost exactly like that guy, the head at the time's recipe was dogshit and would always be sunken, my way made big fluffy cakes with lemon curd and meringues.
Also, lamb is my favorite meat, and that person decimated it. It was gray inside, which is fine if you like it that way. The best and most often cooked way is to roast it and leave it pink inside, which is pretty much medium-rare and a mint sauce.

When cooking with foil, one side is shiny and the other side is dull. This is because the smooth, shiny side is very reflective and reflects heat, which is why you should have the shiny side facing in towards the food. The dull side of the foil is not reflective, so it allows heat to enter, then the shiny side keeps most of the heat in.
One side of aluminum foil has a polished finish, and the other side does not in most cases. The polished finish reflects light & heat. I think you got the rest on why Ramsey said he had it the wrong way.
It's not that hard to make a decent steak and it's heartbreaking to see so many people destroy a beautiful piece of meat that was once a living creature. I hate Peta and vegans and as a meat eater I got to say it seems like a lot of people don't respect the fact that our food was once an animal.
People think the heat is reflected more on the shiny side so you put the dull side on the outside so that the inside cooks faster. Shiny side toward food. Hope this helps.
