I do think he's raising valid criticism on the first video since you waited to remove the silver skin until after you marinated, but either way I think getting roasted by Gordon is a right of passage lmao
I think Gordon is very well aware of the personality that he's created as being the big hardass chef, so he leans into it for the content. When he makes these reaction videos, I think he's doing it more for the memes than to be an actual critic. I don't think it's unintentional that he chooses the weird ones to react to. Even looking at him roast other guys like Guga and Max, I always see him reacting to the weirder videos.
I think every criticism was justified. I don't understand how someone can ruin a prime fillet not once but twice in the same cook. More money than sense.

Gordon Ramsey using reverse psychology on Jack to make him a better cook he doesn’t care about when he makes a good dish he wants to see when you mess up bad and see you make mistakes as well and not a perfect cook it’s humbling and will make him even better

gordon ramsey is more restaurant base with proper kitchen an well plating, whereas u do more trial-and-error backyard style with homeboys which is something i respect. it's how u discover new taste

With all due respect to Gordon Ramsey, I feel like he fears change. He’s very traditional in most of his food, so your creativity frightens him. While your execution may not always be exactly up to his standards, I think he should at least give you some props for being creative. Just my two cents - keep doing what you’re doing!
I think a lot of it is jokes, some of the criticism is valid tho like not removing the silverskin before marinating, this is just food science rather than a question of creativity, it would be like expecting water to boil by putting it in the freezer. The Wellington recipe honestly looks to be delicious and I think what Gordon is saying is that this is a new dish, not a Wellington.
