Angelo Sicat Well yes, though I would say ham comes from the thigh, not the ass. There’s also what is sometimes called picnic ham which comes from the same portion of the foreleg as ham comes from the hind leg.

Angelo Sicat I’m not so terribly knowledgeable myself and have just started getting into meat and fish butchery, but it is something I hear people say that humors me. They won’t eat an animal’s butt and then you check their fridge for the sliced prepackaged ham. My chef worked at Arzak and said they would use the bones from the Iberico in soup stocks for staff meal, that sounds like just about the greatest staff meal I could imagine.
