WorkingClassSloth, it might be one of those dishes you only let yourself have 1 x year. Like at Easter or Christmas so others are there to share and I'm not temped to eat half the dish myself. Too many people at Thanksgiving because then I might not even get any before it's gone. I was trying to think of a way to do the bacon. I do think lining with it would be too much but I felt like mixing it into the mac would make the bacon soggy. So either mixed in with the chips to go on top. Or, 2 thin top layers with either crumbled bacon then chips or chips then bacon. Humm. Christmas is a long way off. Maybe I'll aim for Labor Day. I read a novel where one of the characters cut up cubes of a cooked ham to stir into her mac. I guess that's like a country version of lobster mac & cheese. I never tried it but now it just seem a little dull. 😀

I put 7 cheeses in my mac and cheese that is why I only make it for the holidays lol
