Thank you so much for this reminder! It's been years since I've made avgolemono, and it's perfect timing as we come into soup weather. I have black beans soaking for tomorrow night, planning to add cabbage, onion, and a carrot, with a bit of finely diced Italian herb-baked ham for spice. What would you add to your black beans?
Thanks for this lovely chicken soup recipe. As a fellow Greek I'm happy to see such big cooking channels picking up on our cuisine. I wanted to point out though that avgolemono is a thickening method that you can use for any type of soup and not a soup of its own. Avgo means egg and lemono comes from..lemon :P A lot of people in Greece cook soups either with or without it depending on their preference, so I thought I'd give you this additional information :)

I just made this and it was amazing! I just happened to have leftover rice and a rotisserie chicken I got yesterday! I made this soup many times before but your version was the most flavourful and easy of all, I used carrots on mine and skipped th3 celery since I didn't have any!
This was literally the best soup I’ve ever made… WOW! My market doesn’t always have rotisserie chickens, but yesterday I was able to buy a fresh one, pulled the meat off and stored it. I made the rice yesterday and made the soup today for the family and OMG!!!! I love that it looks like it has cream, flour and all kinds of things we don’t want, but it doesn’t and is SO filling, delicious and satisfying. I’ve never used this method of making soup before. Love the soup. I spend $7 for a bowl at nick the Greek and it doesn’t even have rice 🍚 only bits or chicken. As soon as I saw it I went to the grocery store to get the ingredients to make it for lunch. Most of all I like your recipes because the ingredients are simple and easy to find.
My favourite soup!! Even though I make it like my Yiayia would make I loved your take! For an interesting tangy saltiness I add some chopped preserved lemons. Will also def be sending it to my Mum to try - we’re both big fans 😊
We made this recipe last night for dinner. Everyone loved it and it was really easy to make. We diced up a carrot and we added it to the celery. This is a recipe that we will be making again since it was a big hit! The dill added a lovely garnish and flavor. Thanks for sharing this great recipe!
I recently made this. I know it back since ...2009, when I got a cooking book from Corfu. And the egg and lemon, it was a change from our Românian mostly tomato bullion we add to broths (chorba).one difference, though, is that I add it after the broth is done, and I removed it from the stove. I enjoy very much your videos!
I always appreciate all the videos you post. I have tried some of your recipes and love them. My work schedule is being an early riser. I do make different smoothies for one thing. I'd love to see some recipes that can be made ahead of time for hectic work schedules. Be blessed 🙏
Thank you so much for posting this recipe. I was going to put the chicken in the freezer and use it for something else because I didn't have confidence in the recipes for Avgolemeno soup until I found yours. I also like that there won't be so many leftovers so that I get sick of eating it. My 2nd favorite soup is Tom Yum soup. I would love a simple recipe for that!

This was so delicious! Will definitely be in regular rotation this fall. Curious if you have any tips to keep leftovers as “soup-like” as possible? The rice absorbed all the chicken broth, and while it was still delicious, the texture changed into more of a thick porridge.
Love this video. You asked about more Greek recipes like something with gyro meat or Italian wedding soup and some casseroles for cold nights or gobi manchurian (dry). How about a poke bowl too.
I am so happy you found out about this delicious Greek recipe and also made a video about it! Well done Lisa! I must say though that the best way of cooking this soup is to boil for several hours the whole chicken - especially the bone parts - so you can get a yummy and nutritious broth, and then put the remaining ingredients ;) Greetings from Greece!

That looks glorious! 😍 I'm absolutely going to attempt this, with a few slight changes... (Because I know my family 😉) I'll use my Thermomix to shred a cooked chicken breast... It goes way further that way. I'll avoid the celery - no one in my house likes it - and I'll use grated carrot instead. And I'll use instant rice vermicelli noodles instead of the extra rice. And I'll absolutely add the extra chicken stock! AND I'll serve it with a side of home made crusty crunchy sourdough garlic bread! 💓
I just made this. it's unlike anything I've ever had, and I messed few things up. I didn't measure things, so I added too much rice, now it's really thick, but it tastes interesting, and I reckon I'll be making it again

I will have to make this to share with my eldest son! We both love Greek food. I do have a question though, when I’m doing more strict eating (no grains at all) do you think cauliflower rice would work instead? The only part of using it I’m unsure about is as a thickening agent as you do with the rice. Would cauliflower rice thicken enough? Thank you so much for your recipes! I’ve not only enjoyed them as written but have learned things about how different ingredients work to use in my own recipes. 😁
