[RECIPE IN THIS DESCRIPTION] Greek Pilaf "Rice".
This super easy vegetarian friendly recipe is really refreshing. I find Greek style food to have that "refreshing" factor. Where it tastes 10x better in Summer and feels like you're eating something really good for your body. This "rice" is a subtle flavor with a slight lemon taste to it and pairs BEAUTIFULLY with roasted peppers and halloumi!

INGREDIENTS:
- 400g (14oz) Cauliflower Rice
- 1 Large Onion, diced
- 1 Garlic Clove, minced
- 3 tbsp Olive Oil
- 1/2 tsp Dried Oregano
- 3 tbsp Lemon Juice
- 1 tsp Lemon Zest (I used Dry Zest)
- 250ml (1 cup) Vegetable Broth (I used 1 x OXO Cube & Hot Water)
- Parsley, for garnish
METHOD:
1. In a large saucepan (with a lid), over low-medium heat, add the oil and the onion. Cook for about 5 minutes or until soft and translucent.
2. Add the garlic clove, mix well and cook for another minute.
3. Add the cauliflower rice. Stir well. Then add the lemon juice, lemon zest, oregano and vegetable broth. Mix well and bring to a simmer.
4. Once simmering, cover and cook for 10-15 minutes, stirring occasionally, until most of the broth has evaporated.
5. Serve, top with parsley and enjoy!
