I actually had this dish in Turkey and stumbled upon this video while searching for the recipe on RU-vid it’s very delicious melts in the mouth and the mild sting of the lemon in the sauce is just heavenly 😍😍I’ll be making this tomorrow thank you akis and you have a new fan
@stelkizi pastichio is a greek oven dish with minced meat, thick sized spaghetti, and bechamel sauce on top. But the dish is baked in the oven and the bechamel on the top becomes soft solid. its very very tasty.

Αυγολέμονο χωρίς αυγά! Bechamel sauce with lemon is an excellent replacement! :-) I'd also substitute the meat with mushrooms and chickpeas - for complete protein - although, that's not how the dish is prepared traditionally. I'm trying to veganise your recipes. I hope you don't mind :-)
I have a question: if your intent is to steam the zucchini, why don't you have an grate-type insert in the pot to raise them above the water and the bottom of the pot?

avgolemono sauce is made with eggs and lemons, correct. This is not avgolemono, its a type of lemon bechamel. This dish is traditionally made with avgolemono so you are not mistaken :)
