This is a great summer recipe I remember having as a child. It’s what I call our Greek Yogurt Strawberry Bar Dessert. It looks fancy but it is totally made at home and is great for making with kids. Once you get used to making this recipe, I encourage you to try it with different fruit flavors if you have something you’d like to try. I, for example, also like cherry or peach, depending on what’s available.
To get this recipe right I encourage you to try these amazing cookies that maintain their crunch even when they’ve been frozen into ice cream. You can easily order them on Amazon, or perhaps find them at your local grocery store. Then, have your bowls ready so you can prepare these on your countertop without having to run around and fetch lots of things while you’re in the process of cooking. You want this to be fairly seamless since you’re working with liquid that will turn to a solid and have to fill baking pans just so to get everything right.
Once everything is going it mostly becomes a matter of timing the chilling so you complete the first part, then have the top layer ready to assemble. In the fridge, the bars will chill into a delicious frozen dessert. They’re really easy to slice and serve directly from the fridge once you’ve finished the final three hours of chilling. My kids love them with a little whipped cream and sprinkles on top. You can even make this into a summer birthday cake or serve for the Fourth of July.
