Saw this video Sunday morning here in Kentucky. So after Mass, it was right to Kroger for a few ingredients I didn’t have. Used the Muenster Cheese as suggested. After pulling my chicken off the rotisserie chicken I poured hot water right in the bag with bones skin and all, let it sit for a bit while preparing other ingredients, strained that and used it for my five cups of water. Had the 505 Southwestern Hatch Chile that I had previously purchased from Costco. Made it just as shown. GOODNESS! This is a keeper! Put a bit of sour cream on my fork with every bite. Yummy, THANKS!!!
Looks amazing as your food always does, now I'm hungry 😊I ran out after watching this morning and got started, delicious thank you ,I loved your other enchiladas too and did hubby.
Excellent. It's a good thing I'd already had breakfast. I prefer these in a casserole, specifically because as great as they are out of the oven, I think everything melds for a richer flavor in the fridge over night. I love reheating in the morning and covering with a couple over easy eggs for breakfast. I'd have them for every meal until gone, if I could get away with that! Awesome, thank you for sharing!
That's what Tony and I do. So long as we top them with a fried egg, they work for breakfast, lunch, or dinner. Thanks for the comment. Hope you're having a great weekend.
This is awesome. Like you I too make these differently, but this way is awesome. What I love about your recipes is when you say green chiles, you mean green chiles. Me too. Nothing else green works for me when it's called green Chile.
Looks great! I never knew there were so many ways to make enchiladas. Last time I tried I used too much canned enchilada sauce & made myself sick. I can do these. Thanks!🥘
I also make enchiladas with sour cream. And then there's red enchiladas. So, yeah, there's many, many ways to make them. Hope this recipe works for you.
Good morning Marcy & Tony, yes that's the classic way I make mine handed down by my Grammita & Mom my daughter makes them this way also and Chilaquiles style.
Several people have now commented about Bueno chile. I'm definitely going to look for it now. It would be nice to give more alternatives because people are always asking me. Thanks for the comment.
Oh my, that looks delicious! I have some home roasted Hatch chiles in the freezer and I'm so stingy with them, but this might be the day to break them out! 🤣 I may serve mine with a small spoonful of sour cream on the side. 💕
That is so funny! I know EXACTLY what you mean, especially as the year goes on and the amount of chile in my freezer starts to get low. I have to think if what I'm making is "worthy" of my Hatch chile!
I was planning to make green enchiladas for a Sunday dinner after church. I was making them into a casserole, also. I usually cover chicken breast with chicken stock and bake in the oven until done and then shred the chicken. I use the rest of the liquid with some more water in the sauce, but pretty much the same as you do otherwise. I can attest to a tasty recipe.
I can smell the aroma all the way here in Oregon! You're mesmerizing! I'll show my wife... and give it a try myself (she likes to let me experiment). Thanks again. Your kitchen (house choice #2!) looks marvelous, too.
As I said in the video, there's many ways to make it. I forgot to mention, you can also use chicken broth instead of the water. I've also shared recipes for sour cream enchiladas. It's definitely better homemade. Thanks for watching.
I love munster cheese. Being from Wisconsin I forget people don't have massive varieties of cheese at their stores. But I can only find jarred or canned hatch peppers.
Thanks do much for your input On making from scratch this great recipe!! Going to get all the things I need at the store to make these up!! Marsay from Az. 🌞💓
I've found another good substitute for fresh or frozen REAL roasted green chile is actually Bueno brand frozen green chile that is typically available in most grocery stores at least in Texas and of course NM.
Hello my friend 👋, as usual you made me hungry again!! Never tried making them stacked up with layers but I'm definitely going to try it for sure! Made them rolled up as well as chilaquiles style! 😋 Any leftovers I eat the next morning with some eggs for breakfast! So yummy...😋👍 I wish we had smellovision, to smell how wonderful your kitchen must've smelled? Mmmm....😊 Thanks for another goody recipe! Marcy I really like your beautiful ring 💍 on your right hand ✋ Very lovely! Have a wonderful week and, Happy Halloween to you and Tony! 👻🎃☠️
That's exactly what we did with the leftovers. A fried egg on top of enchiladas works for breakfast, lunch or dinner! Thanks so much for the comment. Hope you're having a wonderful weekend, as well.
Hiiiii Marcy! I absolutely LOVE your kitchen, AND your dishes! Thank you for sharing this very nostalgic dish with everyone. I just made this a few months ago, with my frozen Hatch green chiles, and cream of mushroom soup as my thickener. I’m definitely going to try your recipe! You are so right, when you say it’s a crowd pleaser. I’m so happy that you found your beautiful home! I miss Las Cruces so much! Especially, during chile season! I cannot wait to get back to visit my hometown and family soon. I’m so curious…..Will you be decorating your home with luminarias for Christmas?
YES!!!! When we bought this house, I told Tony I could already picture the luminarias! I'm so looking forward to decorating for Christmas. I should probably start shopping for them now, as it's not practical for us to use real candles.
I do not fry my tortillas anymore....I have found roasting them on a griddle till they are lightly toasted have a little more texture and hold up well with the sauce.
Hi marscy love yr dishes ptetty where buyy them.glad see you again your by me texas wish meet you love you always lori m prayers me and my family beautiful house god bless yoi and yr familly
I've never seen anybody use water and a roux to do this, everyone uses chicken stock and cream of mushroom or cream of chicken soup. So much more flavor than water. We do it this way as flower is not in our diet. Still looks delicious though.
Thanks. As I mentioned in this video, I make them all sorts of ways, and enjoy them with the cream of mushroom & chicken, as well. I also make them with sour cream. I guess I just love enchiladas, period.
My corn tortillas do not fry up like yours did. They do not puff up at all. I've tried to lower the heat or increase and they just get stiff and fried. Is there a specific type or brand that works best or another secret?
First off this is not Mexican it is New Mexican. Second off New Mexico is in the United States of America where she's free to put whatever damn cheese she wants on it.
