This is a very different twist on the traditional Thai papaya salad because Thai ppl don't put tamarind juice, brown sugar,shallot, thai basil, and coriander in the salad. We use lime juice and palm sugar instead. Moreover we don't only mix the salad but we pound it in the mortar to make the favor more intense.

Some restaurants do add some tamarind juice in papaya salad to make the flavor more intense. I've seen it before :)

Gordon, you forgot 1 ingredient, and that is cherry tomatoes! I am part Laos and Thai and Papaya salad is like kimchee to us. It is a must that we have it with every dish 😄

Nothing is fake in my opinion, as a Chef we combine and cook our own recipes from the originals. We turn the originals to our own dishes. Cooking as a chef is different from cooking your own recipes at all. I love the way he s presenting and i think i can make my new recipe of papaya salad for my American s friends☺️ thx Ramsay

I am Thai and I understand that food is art so you can twist in many ways. I am ok for how you make papaya or forgot to put some cherry tomatoes but PLEASE do not put basil in there so this dish is definitely not papaya salad or somtam AT ALL!!

Am a Thai person. We don’t cut the. Garlic and chili cuz it will be crushed in the mortar. U don’t use tamarind cuz it will get sour with the lime and we don’t also use cilantro or Thai basil

Thai people crying about it not being "the real somtam" is what I expected lol I'm Thai myself who loves eating somtam and my mouth is watering washing this video. Food is always adapted and why would you expect a foreign chef to just cook it traditionally? Basil in somtam? Weird af but it looks so good. I love basil so why not put it in somtam next time. Thanks for the idea lol This dish is actually quite far from somtam we've seen but it looks too good. I really want to try it.

Would you guys stop flipping out, sure he may not have made it like TRADITIONAL somtum and papaya salad but he made it in his own way because he was INSPIRED. Get it through your thick skulls that food is also an art and by adding our own unique style to the dish we make something we ourselves can enjoy. For example, some put a lot of lime in their papaya salad, some put a lot of fish sauce, or some like to add flipping bacon bits. For Goodness Sakes People! Can't we just do what we want and no I'm not trying to disgrace anyone who thinks "Oh traditional is better" or "Oh you don't know what you're doing, as someone of Cambodian/Thai/Lao descent I'm offended" because I am Lao and I think that it's great he decided to add his own twist to one of my favorite foods even if it's for the better or worst. If anyone read this comment all the way to the end, think about what I've said the next time you judge someone else's ideas and you also get a huge. Sorry if I offended you in any way, shape, or form.🙇🏻‍♀️🙋🏻😁

Akira Shin he is right, pounding the salad with the sauce changes the composition of the salad and the flavors blend together this is like making pepperoni pizza and just slapping it on at the end after its out of the oven

He's an amazing chef, but his hilarious problem is that he can't make Asian food to my knowledge. I'm pretty sure it's simply because he's grown up with certain tastes, it's like if you grew up not eating fish you lose that intense discrimination. Not saying it's not delicious, just not Thai.

The recipe in the book calls for using Tomatoes unlike what is shown. It also use up to the Birds Eye Chilis not 1. He does add salt and mint which are not normally used.

Wishful Lie I'm sorry but this food is actually more popular in Laos and Thai(his version of cooking it is definitely inspired by Thai version of the food.) And as a Thai myself, I'm not even mad. Not everyone is so utterly ignorant that they don't understand the fact that when the food travels abroad, it will definitely be adapted to suit the people in that particular country where is its destination. So you might not be so lucky to find that kind of comment soon. And for god's sake stop looking down on the others by accusing them of doing such an idiotic act.

no banana, no carrot, no green leaf... just a payaya add more chilli that can burn your mouth, a small tomato or italy tomato is ok.. MSG .. not thing wrong with it... if you don't mind eat with some thing oily.. beep stake, chikenwing , pig BBQ ...enjoy.

As a Thai, this is totally NOT Thai Som Tam at all!! We don't chop garlic or chili at all. We don't put coriander, shallots or basil in our Som Tam. We toss the whole peanuts. We don't make the dried shrimp like powder. We use palm sugar, we hardly ever use brown granulated sugar, and we don't put sugar to soften the chili's. We put the ingredients into the mortar and use the pestle to mix everything. There are lots of wrong things in Som Tam. Now I feel like Italian people seeing some pineapple in their pizza.

This is a "Gordon Ramsy's Papaya salad" not Thai papaya salad. That's why the ingredients are not exactly the same as Somtum. tbh his papaya salad looks delicious and authentic. I can imagine aroma of those herb and the taste of sweet, sour spicy, and salty all in one dish. I'm from Thailand, even we don't put basil and coriander in Somtum but we eat it as a side dish.

I had this in Thailand, so good I tried eating the whole bowl. But the restaurant failed to tell me the bottom of the salad was lined with bird's eye chilli's. It was so spicy my eyes welled up and I started crying lol. Was still good =)

Ramsay's interpretation on "Som Tum", a traditional dish of north eastern part of Thailand. I really like how he always have his own interpretations on every dish. As a Thai, I'm quite sure this dish will taste amazing. I will try making this version sometime.

While papaya salad is popular in Thailand it originated in Laos. That said, it isn't made that way in either country.

Please Chef Ramsay, I am one of your Fan since Hell Kitchen. There are so many versions of the Papaya Salad allover the world, and you may call this one Ramsay Papaya Salad but pleassssssee do not call it "Thai Papaya Salad" because you might confuse and misunderstood your audiences about this dish. Whoever provided you the recipe just got your leg pulled.

I'm Laotian and my mom is super serious about shredding papaya up w/ a k I've & only a knife. I've seen ppl cut it up differently but I think my mom is super proud or just stuck in her ways or both

It's like 50% of "Som-Tum", but actually, it's not "Som-Tum". It's Gordon"s papaya salad, LoL. Tamarind, Coriander, Banana and Basil aren't ingredient of "Som-Tum", but Long bean and Little Tomato are must have. Moreover, we don't make paste for "Som-Tum", we just put everything into mortar and crush them, let's their juice mixed together, paste like that look similar to "Miang-Kum" source instead. P.S. didn't mean your salad isn't good, it's look yummy either, but many ingredients will make this dish taste and smell shift miles away from "Som-Tum".

He didnt have to say “Thai” papaya salad. We all know green papaya salad is a southeast Asian dish and this does even come close to the real dish itself. It’s not even a Thai dish to begin with. It’s origin is from Cambodia and laos which does it way better. This is just an insult to the actual dish.

The actual recipe uses 3. He also does not show adding the tomato as in the book. The on-line recipe uses mint the printed does not and this is not a good video.

And the zoom has got slightly better, but the cameraman still needs to use less of it.. I guess its ok if you watch it on an iPad, but on my 27" i almost feel nauseated. So good one :)

Love it! It's like partly Som Tam partly Pad Thai partly western salad. Gotta say Gordon Ramsay nailed the ingredients and flavours. Those are everything Thai and I appreciate his accuracy.

It’s funny reading the comments from 6years till now arguing about this recipe. Anyway you can add any vegetables you like in the papaya salad as optional. No offense to eat what you like. You can’t judge it’s right or wrong just because you’ve never seen or eaten like that before. Disclaimer: Gordon’s version was not far away from the authentic one in term of ingredients. For the mixing method I think he tried to make it easy for westerner to understand making it. We eat differently from each other, house to house, region to region. For example some like to have peanut in this papaya salad but some don’t like.

This salad is exactly inspired from his asian twist as his footnote, but not based on real 'Tum Thai'. His style is likely to put more aromatic herb like basil into the dish and gently mix every thing together by hand. From those amounts of papaya he puts, the dish probably tastes light and fresh. On the contrary, the traditional 'Tum Thai' is more intense because it is sour from lime, tamarind sauce and also cherry tomatoes, spicier from a bit more chilli, nuttier from roasted peanut without any smell of basil and more importantly every thing is pounded in a mortar which makes all flavours come out.

I love me some Sohm Tam (papaya salad)! Every time I think of it, my mouth literally waters at this smelly dish! In the version my family makes, we put pickled crabs (the small crabs found in the rice fields) with its juice in. We don't put herbs in Sohm Tam originally, however, your dish looks amazing and has the key elements inspired by the Thai dish; great job!

May I suggest using fresh shrimps in addition to dried ones. We do that in Vietnam and it works great.

"Som Tom" translates to "Sour Pound," it's sour and the technique of pounding in the morter produces all the juice and flavor. You didn't put enough sour OR pound.

as a Chinese who grew up in Bangkok. This is NOT an easy dish to make. Chefs all over Asia does this dish but only those grandmas who have been cooking all their lives can get it right. The paste is hard to come by , too.

Good idea because I live in Minnesota and green papaya is hard to find. My closest Asian market is 70 miles away. I can grow kohlrabi in my summer garden.

As a Vietnamese, I do appreciate the addition of banana shallot and carrots to the papaya salad. Vietnamese version use only green papaya, beef jerky, Thai basil, peanuts, and sweet tamarind sauce. Sometimes, I get tired of eating just only green papayas, I feel that it's lacking something. I like this idea! I'll definitely try it. Btw, I have yet to try Thai and Lao version of papaya salad. I hope to get my hands on it someday. :)

Heather Modoki There's no sweet tamarind sauce in Vietnamese papaya salad. And it's Vietnamese papaya salad isn't a different version of Thai papaya salad. The two are completely different.

1:05 if you think thai fish sauce smells "pickley" you might need your sinuses checked gordon. Fish sauce is fermented fish extract with a pungently funky, meaty, umami taste. It doesn't have the acidity of anything pickled Reply

Every Gordon Ramsay recipe ever: Now I'm gonna make something that's so ridiculously simple, a 4 year old could make it in under 3 minutes. First, get ya pan on. Splash of olive oil. Add 3 filleted moon herrings. Sprinkle that with some salt and pepper. 5 minutes later.... next, add just a little bit of sugar (*pours in 5kg of sugar) and a little bit of butter (*dump truck drops giant slab of butter, crushing Gordon's house). Cooked in under 3 minutes, spoon filleted moon herrings with Spanish truffle, lemon squeezy bananas, spaghetti, and apple fritta sauce topped with garlic basel Cornflakes, done.

I'm a Thai person, sometimes I can just put a few chilli peppers, actually in Thailand it's about 2-3 seeds, the taste matches well. And another thing, why do you add so much sugar? When it's done, it's not like Thai papaya salad at all. very lacking

It's no difference than people making carbonara and Italians went mad af. You just can't do that to a papaya salad, it will not taste right. Why would you call the Thais stupid for giving comments on his take? Does that mean I can throw in random shit into a well-known dish from your region saying I was inspired and you swear you won't say a thing? That is just not logically sound.

In cooking you need to be creative so your dish will stand out if you try to go on with the traditional style there's nothing wrong but some people want it to be different so there's no point to be dissapointed. In food industry you must be creative always trying different ingredients. Just like us we are different from each other some are not and some does. Gordon is a top chef and you're not it's just an example but it's a fact.

Every time he's making something there's always some "genius" who will say "I am from ______, this is wrong" First, just because you are from a certain place doesn't mean you are definitely better in cooking local food. Second, Gordon never said he is cooking it the way it is cooked in your country. It is a dish inspired by your country's cooking, Gordon's style. Yeah we know you are proud that your country's dish is featured in the video but this is getting annoying. try getting 16 michelin stars first, then you can teach him how to cook.

Richard Johns If you want the real reason, it's to do with something CAP theorem. Basically for videos to available all the time and available from multiple different servers you have to forgo consistency between servers. This basically means that when you see a video available to you, it may have already be available to someone else before you even see it.

I like the idea of this fusion green papaya salad however if you use palm sugar instead of white sugar it would give you a smoother flavor. Also, good fish sauce is very important I found that the one you used it give only salty taste but there is not much of different flavor.

I think this is very interesting way of cooking Green Papaya Salad. Our traditional recipe can be way too strong for those who are not used to the test of spicy food and scent from pickle fish, so I think this is really good alternative. However, if you like it and want to try something with more kick, you should try the traditional one. ; )

Like I commented before, I love how chef Gordon infuses southeast Asian cuisine into his life. He definitely loves that pestle and mortar. Lol to make a awesome chili paste Gordon, combine those birds eye chilies, green onions, garlic, salt, cilantro, fish sauce and a little bit of sugar. Trust me Gordon you will love it.
