Pollo asado is one of my all time favorite foods to eat. As a matter of fact I don’t know ANYONE who doesn’t love a perfectly cooked pollo asado. And in this video we’re gonna show you how most restaurants cook it and my favorite way to cook it in the backyard. We’re gonna spatchcock two birds - one with and one without the backbone and we’re also going to split one bird in half, which is the traditional Texas style pollo asado.
Now here’s a pro tip - the secret to perfect cooking is fire control, especially in open fire cooking. And the second pro tip - always use a meat thermometer for perfect, juicy chicken. Don’t listen to the keyboard haters that say they don’t need a meat thermometer for perfect cooking, the reason they’re typing is because they’re still chewing their overcooked dried out chicken! As long as you have a good recipe, good cooking technique and fire, your family and friends will love your barbecue. Now let’s get fired up and grill some pollo asado.

Watching you cook traditional Mex-Tex food, reminds me of my time in the Air Force at Lackland AFB in the early 70's. I whenever possible, I would adventure away from the base and look for authentic cantinas to eat. I really miss the good food. Seeing you cook and learning your methods...I'm going to give it a try here at home!!!

I buy everything based on reviews. Some said this was hard to put together ru-vid.comUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt some guy said 2 hours and 2 beers later. I didn't drink beer like I was going to. I didn't feel like going to the store. I'm assuming I would have had at least 3. I took my time. Stepped outside for a cigarette break a couple times but all in all it was about a 3 hour project for me but it wasn't like it was difficult or anything . Only pictures but everything is pretty organized and labeled although I didn't see any #s on the actual pieces like it shows in the diagrams. Only the screws were labeled. On the cardboard part of the packaging on the back side. I put it together in my living room too. It wasn't supposed to rain today but it's Michigan and I couldn't wait so I put it together in my living room. Without beer but beer would definitely have made it more fun that's for sure. I'm giving this a 5 for easy assembly. I'll update after it stops raining when I can take it out of my living room and cook some food on it. Hope this helps at least for people who think they can't put this together because I did and you can too . And there are extra screws. I got nervous and immediately came here to see if others had the same experience and they have. You're not doing it wrong. There will be extra screws. Be patient. Don't rush it. Drink beer. Happy assembling

When my old man taught me, there were no meat thermometers, other than oversized contraptions to measure the heat in a roast or soup. Keyboards only existed on a typewriter. BTW my Dad made some pretty good grilled/barbequed meat and veggies. Not perfect but always worth eating.

I’m looking for a grill like this. And I’m not wanting to sell my wife for one either. How are Lowe’s and Home Depot selling grills for like 400 and there’s hinges and more work to make and bend those grills. And these grill which I have only for one place that sell and they want like 1700.

A good one will last you a lifetime. HD models will rust away after a couple years. Invest wisely!

Removing that fat from the Ass end of the chicken really took my spatchcock chicken to another level. I like grilling it over mesquite lump charcoal which I suppose isn’t ideal since it burns so hot, but that one tip helped prevent burning and excess soot. 10/10 great advice ArnieTex

We only use mesquite lump coal in South Texas... while I like the flip flip method at low temp, I prefer the red hot into the fire fast cooking method myself... if you do it right, there will be no juicer chicken around

I’m as white as can be, but you’d swear my palette wasn’t. I cook and eat only authentic Mexican. I avoid the restaurants and go straight to the abuela, my mexican friends hook it up with recipes and food!

I like to spatchcock and cook it with hot foil wrapped bricks on the top to hold the chicken flat, whether on the grill or in my cast iron pan, brown on the stove top and finished in the oven. It cooks real even with this method and maybe just a bit faster but stays real juicy. 😋👍🏻👌🏻The first time I told my golf buddies I was making a jerked spatchcocked chicken, they looked at me kinda funny. 🤷‍♂️😏😬😖🤭🤫😆😉

I wish you could’ve seen my 88-year-old mother’s face when I told her about spatchcocking poultry. She said, “WHAT?” One day we went to Costco. In the parking lot, Mom asked me, “Are you going to ‘cockspatch’ the chicken today?” Great moments with my mom! 😂

Thanks Arnie. How big are the chickens you are using? I'm having a hard time finding the smaller 3-4 lb frying chickens to grill. My stores all seem to have the Giant 5-6lb hens. Any tips on where to buy the good smaller birds?

Pro tip: Instead of removing back bone, leave it in there and bbq it. Once done cooking, remove it and use it for making broth or soups. You can also vacuum seal it for later use. Not only it adds extra flavor but also prolongs its shelf/freezer life. Another Pro tip: By leaving backbone in, it makes easy to flip chicken while it's on the grill and the chicken integrity stays in-tact for even cook and presentation. After all, they don't call it a Back-bone for nothing.

Sunflower oil is nice and light and makes crispy fried things and is very healthy. Way better than corn or veg oil.

There’s just something about a perfectly grilled Pollo Asado a la Carbon that I love. And your video shows it being done right! The church I attended often had 1/2 chicken plate sales. They were so good but then they started doing the 2 quarter legs instead of the 1/2 chicken. I like the way the 1/2 chicken looks better.

Seasoning looks good but I have a digestive disease and I don’t use seasonings that list “msg” and “spices”. Spices doesn’t list what is actually In the rub . I stopped using all Goya products because of the ingredients on the sazón. This is a pass for me
