To damage proof your vehicle make sure to save it in your garage. Paramedic missions are needed for the "Playing Doctor" trophy as well, an ambulance that is invulnerable is the easiest way to do the paramedic missions if the gangs hate you also, could also use this method on Staunton Island in case Portland is already filled with the Mafia and Triads.
Try entering and exiting the ambulance as soon as it is next to the car crusher to block the driver's seat during a mission. Can take a few tries to get the timing right so found it easier to enter in and out as fast as I can, getting rid of the passenger door helps out. You can also try holding the look back button when you are in the car then get out and then release the button to see if it makes a difference too
