Jacob is one of the best friends in the entire series, always loyal to the protagonist, like Cesar in GTA SA or Lamar in GTA V

And if you listen the conversation when you play, I started to see that their relationship is build built bit by bit until she ready to be with Niko if Niko took revenge.

Nah, Roman is family and has stuck with niko his whole life. If I had to choose between my girl and my cousin I would choose my cousin instantly. You could find another girlfriend, but losing a cousin is losing a brother.

That's why Rockstar made her a dating option to try to make a connection to the player. But let's face it, nobody really sets aside time for hanging out unless there are benefits, and Kate doesn't offer any, even after the storyline is finished.

A lot of decisions are determinant but let's not forget that Niko is his own character and killing Dimitri seems like the choice Niko would make. He'd be insane to deal with Dimitri again.

Roman told him to put aside his hatred for Dimitri and do the deal with him and take the money and Niko was thinking that he put aside their differences and this is the outcome, Roman was killed. On the other hand Kate told him to cut his connections with Dimitri and he thought that it was over because he wasn't there anymore to bother them but this angered Pegorino who lost everything because the deal didn't happen and wanted to kill Niko. Perhaps he felt guilty over taking Kate down without being responsible for anything

The Taxi Depot service could've easily been inherited by either Mallorie or Niko, or even Mohamed. They could've kept the name the same to honor Roman. There is no canonical ending. There never will be in any GTA game. That's the beauty of it. You can make whichever choices you want without worrying that you made the "incorrect" decision. I feel like more games should operate like this instead of, say, Fallout, where the previous titles have their lore set in stone by the sequels.

actually in gta v when jimmy looks in nikos lifeinvader page, it is revealed that niko works as a taxi driver and in one post he says: happy birthday roman. so i guess the revenge is kinda more canon

Even though Niko constantly remarks that he and Roman are tight on money (and desires to live comfortably, kind of like the lie Roman told him in the beginning), he wouldn't be desperate enough to work with the "man" who set him up to kill Faustin and take control of his empire (Faustin even tried to warn Niko of "his" treachery before getting axed off), sell him out to Bulgarin, kidnap Roman to lure him out in the open, blackmail Bernie and not to mention, burn down the Bellics' apartment and cab depot, their minuscule source of semi-legitimate income. Niko would have to be brain dead or extremely greedy to have any desire to work with Dimitri. But at the same time, the Deal branch does work better at getting you teary eyed. With Roman kicking the bucket and Kate breaking up with Niko dismissing his principles and what not. BTW, killing Dimitri on the boat was way more satisfying than eliminating the loud mouthed guido at the end. It's really a matter of preference. If you prefer Niko's story to end with a tiny glimmer of hope, then Revenge is the best ending. But if you want something a little more tragic, the Deal ending concludes the story on a bittersweet note.
