Aarón Sánchez is an award-winning chef, TV personality, cookbook author and philanthropist. He is the chef/owner of Mexican restaurant Johnny Sánchez, with locations in New Orleans and Baltimore, and a judge on Fox’s hit culinary competition series MASTERCHEF.
He co-starred on Food Network’s “Chopped” and “Chopped Junior,” and is the author of two cookbooks. An active philanthropist, Sánchez launched the Aarón Sánchez Scholarship Fund, an initiative empowering aspiring chefs from the Latin community to follow their dreams and attend culinary school.
We are cocina!
We love food, just like every soul on this planet. But we’ll take hands over fancy silverware, anytime. No jacket required. For a dress code, a smile. Bring on the large gathering, we thrive on noise. We include, not exclude. We eat; therefore, we hang to what seems like forever.
Time is not money, but a chance to spend time together. Fresh is the name of the game. Nature, we share. Processed, we pass. We love the science of simple. Grill it. Boil it. Season it. An ancient indigenous voice channels through abuelita. Red hot, chile green, mole brown,
Rice white or corn yellow. All colors are welcome to the table as long as they are colorful. Why not just relax. We cook to nurture you and your history. We may spice your emotions to tears, but we’ll always feed your heart. Only, if you come, be ready to hug. For the love of our cocina.

Thank you Mr. Sanchez, my wife does not like peppers, onions or anything spicy. I never tried guacamole but I tried a slice of avocado and did not like it. I now know why, salt.. I bought a molcajete, cured and seasoned it and made your recipe without the dried grasshoppers. WOW!! I now know what I've been missing... AMAZING!! THANK YOU!!

Tried this recipe today. It is very complex, multi level tasting. You get the creamy avocado, herb, and the diced texture of tomato and onion. Heat comes into the palette. It feels like it’s going to be too hot then quickly changes into lime. The “core” component is the base. Chilies, lime, onion, and oregano blended together. It ensures the acid and heat are evenly distributed through the guacamole. +1000 Cooking Experience Points

The pepper seeds do not contain capsaicin which is the chemical which makes peppers hot. The justification for not removing the seeds from a fresh serrano is that it's a time saver and since the fresh seeds are soft they are easily digestible.

You speak the way mi familia speaks so anything/everything you touch turns to gold as you have the midas touch en la cocina and I hate when people remove the seeds/veins, that removes so much flavor man…/also when people rinse any chile after roasting, hell no, you rinse all the good/flavor and really what’s the point?! NO GRINGO MOVES: gringadas! 😂 Anyways, te quiero un chingo ✌🏽❤️‍🔥🔥

Kinda sad that people are put off by the sun dried bugs, they're actually quite good and worth a try if you're not allergic. We have them mixed with dried chillies and it reminds me of corn snacks--only nuttier

Hey Chef Aaron, Instead of chapulines or worms, can I add toasted Tarantula and Scorpion tails? I also find that instead of worms, fresh dried maggots give the guacamole a bit of fresh spicy taste, but then I can not call it 'guacamole' anymore... I call it "CaCaMoLe" Ha ha ha!! But seriously, it does taste great!! hey! You got your staples but I staple everything my way! I mean, Worms are Worms, Aren't they? You eat grasshoppers and some else eats dried roaches... So. TO EACH, ITS OWN. Bon Appetit!!
