Hi Candy, I made this just a little while ago. I wanted to share that the person I was making it for actually told me last minute that he doesn't eat eggs. However, I found a few alternatives such as linseed, chia seeds or flaxseeds (the linseed you have to heat it first, the other 2 just blend or ground it and add water to make a paste). I used chia seeds as a substitute for the egg. The cheese rolls came out pretty good. The texture of the paste was just like that of an egg. Hope this helps someone ..maybe who's vegan.
