Blair's Death sauce is actually a really good taste for the heat it gives. A lot of superhot sauces have a taste of burnt rubber, but Blair's doesnt. I tend to use mega death sauce, but any are good, since they use actual peppers and not concentrated capsaicin.

I meannn, in principle you're right, but lets not pretend they were exactly "chef'ing up" in this stream. They made "edible" curry; not good curry. And that's not even a guess, you can tell by their reactions at the end. Its not about being perfect, but when you're making pretty overt mistakes in front thousands of viewers, chances are a couple dozen are gonna have something to say. Whether in a genuine attempt to try to be helpful or because they're grouches that genuinely offended and venting their frustration. I think if they were making like C-level curry (rather than D), comments would've been calmer

I would cut vegetables to smaller pieces so the flavor and aroma seer through entire curry better and then seer carrots and some onions first with some olive oil and little butter (ofc don't forget seasoning) and then put on top of the chicken which was cooking in the pot and then put potatoes cook for a little bit and then fill up water, curry blocks and etc. Cooking vegetables to smaller pieces is better because much better texture and flavor, butter enriches the flavor. Rice could also be cooking with some additive seasoning or components. It depends on the balance of seasoning and flavors. if it is a sweet one you might want to balance the sweetness and saltiness also acidity.

Tons of cultures cook onion first; euro? Onion, carrot and celery first. Then garlic because it cooks faster and then meat

A lot of dishes you cook watery vegetables like onion first to get rid of excess water so you can brown the meat easier.

What are you talking about? Vegetables like onions is one of the first things you start cooking in the vast majority of cases and depending on the doneness you want the onion it's the only the only ingredient you want cooking for quite some time before adding anything else. Good luck with adding a protein like chicken before onions if you want them any where near caramelized. It's usually specific dishes you would want to add onions at a later stage.
