Easy and mouthwatering pancakes that are perfect for breakfast. These pancakes will make you crave more with each bite.
Recipe: Ham and Cheese Pancakes
Ingredients:
280g (2 cups) of all-purpose/plain flour
350 ml (1 ½ cups) of kefir
2 large eggs
2 tablespoons of sour cream
110g (¾ cup) of cooked smoked/unsmoked ham
90g (3.2 oz) of cheddar, grated
65g (½ cup) of red pepper
3 tablespoons of chopped parsley
½ teaspoon of baking soda/bicarbonate of soda
1 teaspoon of salt or to taste
½ teaspoon of black pepper or to taste
Instructions:
1. In a large bowl, crack open 2 large eggs and whisk. Add the kefir, sour cream, baking soda and whisk until combined.
2. Add the cheese, ham, red pepper, parsley, salt, black pepper and mix until combined.
3. Add flour gradually and mix until the batter becomes thick (see video).
4. On medium heat, heat some light olive oil. Add the batter, about 3 tablespoons at a time. Flatten the batter into a pancake shape. Cook for 4 to 4 ½ minutes. Flip over and cook for 3 ½ to 4 minutes. Add more oil between batches as needed.
5. Place the pancakes on paper towel to remove excess oil.
6. Serve warm with a dollop of natural yogurt or sour cream. Enjoy!
Notes/Tips:
- The pancakes can last in the fridge for up to 3 days in an airtight container.
- Tomatoes can be used instead of red pepper.
- Any semi-hard cheese can be used.
