One suggestion and one substitute (for diabetics): The suggestion is that depending on what brand of pressure cooker you have (I have an Instant Pot), after you saute the vegetables, add a little of the chicken stock and be sure to scrape the bottom of the pot. If there were any vegetables stuck there, you might get the error code "Burn" during the pressure cooking portion. For the substitute, instead of potatoes, try using diced turnip/rutabega or diced jicama. They are far lower in carbs & starch. All in all, a great soup.
For even more flavor, buy a ham with the bone in it... chop off all the ham and then make your broth with the ham bone & water (enough water for your recipe...unless you want left-over broth that you can freeze)...pressure cook for at least 90 minutes and natural release.
@@sweetestkaysmith5838 the bone stays whole, but the marrow will separate from the bone...usually. If you want more calcium in your broth, add a teaspoon of either apple cider vinegar or white vinegar.
