Ham Balls

While not a tradition everywhere, ham balls are a Midwestern staple. And a lot of times, they're served around Easter as an alternative to the more traditional ham. Either way, this combination of three ground meats with a sweet, tangy sauce on top is a new type of meatball that you will love!

INGREDIENTS
For the ham balls:
- 1 lb ground ham
- 1 lb ground beef
- 1 lb ground pork
- 1 cup graham cracker crumbs
- 3 tbsp grated onion
- 2 large eggs
- 1 cup whole milk
- 1 1/2 tsp salt
For the sauce:
- 1 1/4 cup condensed tomato soup
- 3/4 cup brown sugar
- 1 3/4 tbsp Dijon mustard
- 1/2 cup apple cider vinegar
- 1/2 tsp salt
INSTRUCTIONS
- Preheat the oven to 350°F. Grease a 9×13 baking dish and set it aside.
- In a large bowl, combine the ground ham, beef, pork, graham cracker crumbs, onion, eggs, milk, and salt. Combine until well mixed and homogenous. The important step is to make sure all ingredients are combined.
- Evenly portion into 15 balls and place in the prepared baking dish.
- Prepare the sauce in a large measuring cup by combining the tomato soup, vinegar, brown sugar, mustard, and salt. Whisk to combine and pour over the ham balls.
- Bake in the preheated oven, basting with the sauce every 20 minutes. Bake until the ham balls are firm and reach 160°F internally, 45 to 60 minutes. Remove from the oven and serve.

I just made 14 hamloafs of various sizes. I’m in Indiana but my local butcher ground my recipe which is half pork tenderloin and half honey ham. I then add in cracker crumbs, eggs, milk. For the juice on top: pineapple juice, vinegar, brown sugar and ginger. I baste about every 15 minutes as it’s baking. I did 10lbs of each and gave some to parents.

I never heard of these until I worked in a hospital up in Maryville Missouri and they made them for special holiday lunches. These are fantastic.

I grew up in Ohio calling them 'mini ham loafs'. We always ended up with a ketchep/brown sugar glaze to brush on at the end of baking. But...I've never had them with graham cracker crumbs!! I WILL be altering my recipe...and try yours!

I’ve been in Wi nearly my entire life, I’ve never heard of these but they look delicious. I found a recipe for PA Dutch ham balls- it used ground beef, ground ham, bread crumbs etc, and I was intrigued! Thank you for the recipe.

I grew up in Iowa and have had ham balls ONE TIME. It was the worst thing I have ever eaten but that is probably more of a reflection of that person’s culinary skills (and their recipe). I 💯% trust you, Kaleb, and your recipes, so I’m am going to give ham balls another try. ❤

I have a slightly different recipe that I've been making at Easter for years. It uses crushed Shredded Wheat, no beef, and a light glaze, but no tomato soup. I think I'll try these soon.

Kaleb, I remember my mom making baked ham balls for special occasions, but I was 15 years old when she died, so I never knew exactly how she made them. I was a tomboy growing up and was always busy outside at that age, so I never learned her recipe. However, I do remember that I usually had to grind the onions (tears streaming down my face) using the meat grinder, when she made them. I also remember that they tasted wonderful! Thanks for the recipe and the wonderful memory it brought back. ~Margie

You can use a French dough hook to stir meats and cookie dough. It works really good. It also has a fat handle, that makes it easier to stir as well. I have arthritis in my hand and can’t stir with my bare hands anymore.

My late former mother in law made ham balls with leftovers after a ham dinner. They were amazing. I am saving your recipe to try, because of all the variations I have seen, I think yours will be the most like hers.

Our church ladies group just made and sold 1400 small ham loaves for a fund raiser. Our recipe is slightly different but everyone loves them. Could have probably sold more but we were worn out!

This looks delicious! Growing up in the South, ham balls were done much differently, not cooked in a sauce, but rolled in crumbs and fried or baked. Question: I have some Smithfield ham - think it would work? I need to try this recipe!

Just ground ham might not hold together very well. Ground ham is pretty dry on its own and might NEED the addition of at least some other ground meat.

You cant describe the taste of a ham ball you just have to try it for yourself Iowans love there ham balls. They are amazing but the ham balls i have they sauce is more orange ish and they don’t look as brown when they’re done maybe its my grandmas recipe thats different but my grandmas have more of an orange tint to them maybe we have more soup in it and have them spread out more in the pan. And make sure you don’t overcook the ham balls because then they taste bad trust me 3 overcooked meats mixed together taste nasty so watch them and when they start to turn brown on the top (because of the sauce) they should be done. Look up a recipe to be sure tho. I don’t cook them I just eat them. I just don’t want your first ham ball experience to be bad when they are a very good dish.

So this isn’t really a midwest thing more like an Iowa thing. Because I’ve never heard anybody who lives outside of Iowa know what they are. And honestly its more or less a southwest Iowa thing or western Iowa thing because eastern Iowans don’t know what they are. I looked it up and it said Iowa and Nebraska but most Nebraskans don’t know what it is unless thats just the ones who live in Omaha and don’t have home cooked meals 4 times a week. Thats for anybody who doesn’t know a meat like ham ball or roast beef, with mashed potatoes and gravy and a vegetable. So a home cooked meal is usually a dinner not just spaghetti or hamburgers just because it was cooked at home doesn’t mean its a home cooked meal.
