HAM BONE SOUP/DUMPLINGS
Left over HAM BONE with Pan Drippings
Place bone and drippings into a large pot and cover with water
Boil on medium low for 1 hour. Then remove bone and pick any ham pieces off and set aside. Strain the ham stock and pour back into the pot. Return it to the heat to get it to a rolling boil. While your broth is heating, add
1/2 teaspoon or more of CREOLE SEASONING
Fresh ground PEPPER to taste
SPOON-DROP-DUMPLINGS
3 EGGS
3/4 cup MILK
pinch of SALT
2 cups (approximately) ALL PURPOSE FLOUR
Beat eggs slightly. Stir in salt and milk. Then add flour and stir together. Drop in boiling broth by spoon fulls. Allow the dumplings to cook for at least 10 minutes. Then turn on low and add the ham. Add a couple of dashes of your favorite hot sauce. (I used LOUISIANA HOT SAUCE)

Amy Honey... loved dumpling video. Great memories of my mom making good ole fashioned dumplings. She had a deep well in her old stove. A meal stretcher for a group of hungry farmmers. Or cousins. Bye Lizzie lu

I have never made dumplings. This recipe looks delicious! Loved the account of family history. Many of our families in the area have had similar experiences with name spellings changed. When children were baptized, the pastors estimated spellings because of their language differences. My son-in- law is from a branch of my paternal grandmother's family tree. His dad's last name was changed in the service from a French spelling to an easier English interpretation. We're Cajun French.

Yes, more flour and low boil or more of a simmer. I have problems with my dumplings breaking apart if it's boiling to hard. Mom and grandma also taught me to dip my spoon in the pot then scoop up the dumpling mix, that way my spoon comes out clean for the next spoonful. It's not a necessary step but it's fun to do it like they taught me. It's so nice to think of them as I cook. Thank you for sharing your stories with us. Such precious memories.

Yum! Your the first person I've seen to make dumplings by a recipe very similar to mine! I use only 2 eggs and just enough milk to make the batter come together, maybe 1/2C, my batter is the consistency of pound cake batter. The recipe was brought from Germany by a great aunt in the late 19th century.

Oh Amy this looks wonderful! Dumplings, stews, and soups, always remind me of my mom so much! I sure do miss her! When I started cooking at 13, one of the first things she taught me was ham dumplings. Over time, I learned a lot of the old time recipes and they would literally say a pinch of this and more for good measure 🤣 no measurements at all. And our saying when someone loved the meals is, “you put your foot in that pot” lol 😂! So Amy you put your foot in that pot and I know it tastes so good!!!

The amount of flour depends a lot on the size of your eggs. I’ve never done drop dumplings, but think I would like the dumplings to be stiffer before dropping in boiling liquid. I’ve never heard of ham broth and dumplings but it sounds delicious!

@amyslouisianakitchen
@amyslouisianakitchen 11 месяцев назад
Well Kathy girl. I'm so happy to hear this. Your father in law might be mad at me for showing you something to do with it. Lol. As far as beans, just put a big pot on the stove and drop that ham bone right in. Make sure it doesn't run out of water and cook away. The dry beans will rehydrate and that ham will fall off the bone. Some cornbread and girl you've got a meal. Now I'm hungry! 😄😊💜💜💜💜

I make a similar soup with our ham bone. I put navy beans as well as dumplings. As a young bride trying to impress my husband, I attempted this recipe that was his mother’s and also his favorite meal. I’ve gotten better over the years, but my first couple attempts were just awful. But my hubby was so kind and said it was good. Not!! My dumplings could sink a ship. After 40 some years, I’ve mastered it and now he doesn’t have to lie. Haha.
