Along the coast of the island of Gozo, Tricia and I encountered a tradition dating back thousands of years: harvesting sea salt.
Long before Europe’s maritime expansion and Chris Columbus, people paid a fortune for the exotic spices that we take for granted today, including black pepper, cinnamon, and ginger. As a result, people could only really afford salt as their main spice. Couple this with salt’s ability to preserve meat, and you have the makings of a thriving sea salt trade.
Today, sea salt is harvested around the Mediterranean and delivered to the finest gourmet kitchens.
During the summer months on the island of Gozo, when the sun is blisteringly hot, you can see the locals harvesting their salt. It is definitely worth a glimpse if you’re in the area.
