Consider this a crash course on Hatch Chile Basics. If you're here, you obviously already love Hatch chile. But did you know Hatch is not a variety of chile, it's the name of the town where it's grown...in Hatch, New Mexico. I mention that in this video, along with other important information....from how to tell if the chile is going to be hot or mild, to different methods of roasting and peeling, and how to freeze Hatch chile so you can enjoy it all year round.

We never tried hatch chile till last year after watching huell howsers video for half my life, we made the pilgrimage to hatch and bought our first sack and brought it back to Southern California. Thank you for this video we now know how to work with them and would make the trip again to get more

Yup... We did the same thing, drove to Hatch, bought three fifty pound sacks, had them roasted there and hauled them back to SoCal!🌶️🌶️🌶️🌶️🌶️🌶️😂

I grew up in NM and it’s an annual family tradition to roast and freeze Hatch green chile that brings our family together. It’s a bonding experience for generations. TY for spot lighting our heritage of local foods and traditions.🌶

I love cooking and discovered Hatch chilis about 5 years ago. They have leveled up my cooking. Your video showed me a couple of new tricks. I have yet to master the relleno, which is my favorite food.

When I bring mine home from being roasted I just sit in the car and inhale the aroma of the roasted chili. Honestly I don't want to get out of the car . It smells so good in an enclosed space.

Great video. I cut the stems off before bagging in quart size freezer bags. I do freeze mine with the skin on and just defrost partly, then put in some hot water in bag and gently massage the bag. Most of the skin comes off that way. The only reason I don’t peel the as soon as I get them (which I have done in the past) is it takes a long time to peel a burlap sack full of roasted chile. I live in southeast New Mexico

Thank you for keeping me connected to the 505 at least on the internet. I order hot red chile powder from Albuquerque and make red Chile sauce for enchiladas. 🙏🏻

OMG, one of us is 🔮 psychic!!! I used to work in Flagstaff as a school bus driver, some of my most favorite times in my life!! I have been thinking that at this time of year, Flagstaff used to smell sooooo yummy because they were roasting Hatch Chiles in 2 parts of town. The aroma was sooooo yummy 😋 and the taste of them on everything or alone is delicious. OMG!! Hatch chilis have been in my brain bouncing around. We now live in CA 😢😢😢😢. I really miss this time of year there. I used to eat them right out of the bag all the way home. 🌶 🌶 🌶 🌶 🌶 They are roasted in these huge tanks, and the waiting was worth it. Thank you so much for putting pictures to my dreams. 😊😊

Thank you for this video. I learned how to roast my own chile by your video. We always buy it in big bushels and get it roasted at the location we go to buy it. We really like the chile steamed after it's roasted. You know when you go to your location you want to get it roasted at, they put it in big bags. That does the steaming for us. It just takes so long for it to cool down when we get home. We usually take it outside and open up the bags and let it cool as much as possible so that we can even touch it to put in freezer bags. We never peel our chili ahead of time. We peel it after we take it out of the freezer. We tried one time to peel our chiles before we froze them, and it took forever. It actually took hours. We find it easier if you take them out of the freezer and then peel them. We have found that if you take them out of the freezer , it's better to leave them partially frozen. That way the Skins come off quickly and easy. We have never made chili rellenos. I hope you have a video on how to make them.

You are the best. I'm in Missouri. A transplant from CA. I just roasted a small bag of Anaheim's so I can make some more chicken tamales with green chilies. Next time you have breakfast and you don't feel rushed sauté some diced onions and green chilies then scramble that w/eggs. Serve with salsa, avocado and sour cream. Also tortillas of your choice. It is the best

Every year in August I go to my favorite grocer and look for their sale on Hatch green chiles. I live in Phoenix so it's a little bit of a drive to go to Hatch NM, although I have been through there in August in the mid 90's when working in N.M. I can usually get them for $.99 a pound in season but mostly these days they are about $1.49 a pound. I usually wind up with about 20+ pounds of them, roast them over my three-burner propane outdoor cooker. I haver peeled them both ways, dropped in a bucket of cold water and put in plastic bags for an hour or two. I agree with your cold water results. As for freezing, I place then flat on parchment paper on a large cookie sheet and freeze them. When frozen I can place them by the hand full in large zip-loc baggies and put them back in the freezer. They are available one at a time or as many as you want without having to tear them apart from each other. 🤠

I buy my Hatch chilis every year here in Peoria, AZ. in August. Reference freezing, would your recommend freezing the chilis on a big cooking sheet and then placing them in large freezer bags so you could pick out as many as you need without thawing the rest of them out. I have done this same thing with hot dogs and it works beautifully. I've been through Hatch New Mexico in August. Absolutely gorgeous. If you are ever in La Mesilla, NM (Las Cruces) you have got to try "La Posta" Mexican food restaurant. Every time I travel through Southern New Mexico l ways stop there.

My kids, my dad, and that side of my family are from New Mexico going way back. I grew up eating the Chiles from there. I just picked up a sack of roasted Hatch Chiles out here in So Cal and really enjoyed your video. I learned a few things about handling them after roasting! Thanks you.

Well Marci I am glad I watched this video before ordering Hatch chilies. I was thinking about getting them already roasted and cleaned and frozen. I have decided to order a 25 pound box of fresh medium chilies. I will be working alone on top of my toy hauler stove top. My plan is to put them in the fridge as soon as they show up here in Western Oregon. Then roast, clean and freeze a few every day for the next week until they're done. Or when I'm done whichever comes first lol. If I run into trouble then I'll do the best I can and give away what I can't get around to. I'm sure I can do at least 15 pounds. So I could order 10 pounds but for $15 more I can get a extra 15 pounds. I have a extra freezer in the garage so when I get done roasting and freezing the chilies they have a place to chill out until they are used.

I'm a chile addict from Carlsbad, NM who has moved to Ecuador. I didn't realize how addicted I was to Hatch chile until I couldn't smell that heavenly aroma of roasting chile at the stores in the fall. As soon as I got to Ecuador, I bought some seeds and planted my own chile, but I had little experience in roasting them, so your video was very helpful. It's wonderful to be able to grow my own crop of chile, but I still miss the annual mouth-watering New Mexico experience of chile shopping!

Hi Marcy, I live in Tucson now, but I grew up in Albuquerque. This video brought back some good memories of my childhood. During "chile season" it was a tradition for neighbors to gather at the Padilla's home to roast green chile. Families brought their charcoal grills to the Padilla's driveway and made a day of it. Oh the smell of that chile roasting...I am in heaven just remembering! My parents transplanted from Michigan to NM when I was 6 weeks young. New Mexico is my home.

Grew up in Albuquerque, NM, but now living in New Jersey. I just ordered some hatch green chile from the Hatch Green Chile company, and I will need to roast and peel them before storing in my freezer. This video is a great help on how to do this. Thank You!!!

It’s always fun going in person over Labor Day weekend when the festival is going on. But you can always try looking for Hatch chile at your grocery store. Many times it’s sold in the freezer section. Look for “Young Guns Hatch chile.” You can also find it in a jar. 505 Southwestern is a good brand. Thanks for watching.

I just got my bag of the Hatch Chiles from Costco. Before I watched this video, I just sliced and stir-fried them with other vegetables or proteins. They tasted fresh and maintained a crunchy texture.

Chattanooga, how do you access the NM chile? I live in KY and don’t have access to this chile. Walmart carries the small, eight oz cans, but I want the real thing-the fresh chile without having to drive all the way to Hatch.

My older daughter in San Antonio loves hatch chilis and I will try some. I have been a poblano fan but am interested in chopping some hatch for scrambled eggs and buttered hot tortillas for breakfast. Going to try your rellanos with chorizo. Thank you. Just bagged and tagged my first batch. I bought it at a all organic farm in Belen, the chile was nice and meaty and had good heat but didn't linger too long! I was real happy! I got about 25 bags outta it so I need a little more, the crop has been delayed for some reason from Hatch, that's why I went to a local farmer. I also bought a lot of sweet corn from Olathe Colorado and froze that, It was so sweet and good! Nice segment and tips!!

❤Green chili !!! We don't peel it through, until we defrost. It has a smokier flavor. Pueblo chili is my favorite and Hatch is close 2nd.

We live in Alabama. When we order chili the shipping is cost more than the chili. So we order 50lbs. It's usually late in the day when it is delivered so I refrigerate till I can get them roasted. Usually 2 days because I do them in the oven. I do freeze them with the skin on because it is so time consuming. Also we did Lumbra and I didn't use gloves. I found that washing your hands with toothpaste removes the heat. I love your videos. I have many of your recipes I am going to try.

Ha Ha! Brought back memories in Colo of trucks and people knocking on doors selling green chili. They would let you taste one and if you liked it you could buy a bushel or what you wanted. Loved that smell of roasting chili.

In southeast Georgia, we have sweet Vidalia onions, which are only grow in the Vidalia area of Georgia and is the best sweet onion. This compares to Hatch growing the most flavorful chile. In Georgia, I have to buy the cans of Hatch Chile, but that is better than nothing.

I'm from Manhattan Beach and my Dad was from New Mexico. I still have relatives there and they sent me home with hatch green chilies one year so I've been ordering them fresh since then. I love to make Posole de Posada a couple of times a year! Thanks for a great video!

Mini chile rellenos! Or stuffed with cream cheese. Mmm. I haven't peeled chiles, poblanos, seems pretty labor intensive. My wonderful husband has done it, when he makes chiles rellenos. I don't know if we can buy hatch here in San Diego. I'll have to keep my eyes peeled. I think I've seen them in cans. (Right when you said you kinda wished you had some beans and a tortilla right now, the subscribe button came up in the corner with a little noise, I thought beans and a tortilla were going to "magically" appear! lol)

Hi Marcy I’m watching from El Paso,Texas about 40 minutes away from Las Cruces NM. Love your channel and your recipes are authentic. We also buy them roasted by the case, peel them ourselves then put into ziplock bags and freeze. I make green chicken chili enchiladas, green chili caldillo and also make rajas con queso using green chili instead of poblanos. Thank you again for all your amazing recipes and information. Thank you for this video, it was very helpful. Just yesterday we came home from visiting friends in Las Cruces and they took us to Hatch where I got to bags full of just roasted Hatch peppers. What a treat!!!!! I am and have been obsessed by roasted peppers and love just about everything Mexican when it comes to food. I had the best ever huevos rancheros with green sauce in Mesilla and can't stop talking about it. I hope to see lots of your recipes....I have liked and subscribed. Thank you again.

I'm a transplant to West Texas and put up 120 lbs a year. I do leave the skin and stems on for additional protection of the chili in the freezer. It's why I never returned home. Can't get too far away or I can't get my Hatch chili. Got to have my Hatch chili

Thanks for including the part we talked about a couple weeks ago re: avoiding the "power washed" method that some folks fall for when buying roasted chiles in Hatch! Great tip on the water shock method. I'm going to try that next year with some of mine. They'd be perfect for rellenos as I'm a disaster at making them, even when using gigantic poblanos. Mine pretty much always turn into "Plan B"...'relleno casserole' because I not very good at splitting them and many end up tearing apart completely. Just never got the hang of it. Also, the firmer ones would be good as rajas in chicken tamales. Our old neighbor, the proverbial abuelita, would make hers in the standard way as far as the chicken in salsa verde but then she would add a raja of jicama (I think, but it might have been potato) and green chile laid over the chicken, no cheese. I have no idea where she moved away to years ago but her tamales are imprinted onto my brain for life.

Lived in Albuquerque for 8 years, all about Balloon Fiesta & Hatch Chili. I had my first Green Chili Stew @ Gardunos, i was hooked. Now live in Orange County Ca.

I’m in NC so I have to order about 15 lbs & roast them. I only order from Hatch Chile store NM. I roast mine on kingsford charcoal. The extra flavor is great.

A single pod has as much vitamin C as 6 oranges. Also has vitamins A, B, E, potassium and calcium. As the chili turns red, C decreases and A increases due to carotene, the chemical that creates the red and orange colors.

Hey love it Susie Should I be looking for a different name for these Chili’s in the grocery store? They look familiar but I don’t recall the name hatch. However, I’m on my way to the grocery store, and I will make a point of noticing the name. Loved the botanical gardens from Denver!

Hi Susie! It was so nice to meet you! There's a very small window in which you can find Hatch chile fresh in the grocery store and that's late August through September. It will always be labeled "Hatch," though it looks similar to Anaheim. When it's out of season, you can still find Hatch chile in a jar. 505 Southwestern is a good brand, or you can find it in a can. It will always say Hatch and chile will be spelled with an "e." Thanks for watching, and for always looking out for the crew at work.
