Lunch Box Ideas
Ingredients for Dough:
All-purpose flour 3 cups
Yeast 1 tbsp
Salt 1/2 tsp
Sugar 1 tsp
Luke warm water as required
Ingredients for Chicken Preparation:
Oil 3 tbsp
Chicken boneless chunks 1 kg
Chili sauce 2 tbsp
Tikka masala 1 tbsp
Garlic powder 1 tsp
Salt 1/2 tsp
Ingredients for Chocolate Coconut Balls:
Desiccated coconut 1 cup
Almonds (chopped) 1/2 cup
Walnuts (chopped) 1/2 cup
Melted chocolate 1/2 cup
Ingredients for Mini Pizza:
Prepared dough
Prepared chicken
Mozzarella cheese (shredded) as required
Capsicum (chopped) as required
Black olives (sliced) as required
Ingredients for Assembling:
Prepared mini pizza
Prepared chocolate coconut balls
Peach cubes
Cantaloupe cubes
Directions for Dough Preparation:
1. In a bowl add flour, yeast, salt, sugar, water and knead a smooth dough. Cover and let it rest until it doubles in size.
Directions for Chicken Preparation:
2. In a pan heat oil and add chicken. Cook until chicken changes color. Add chili sauce, tikka masala, garlic powder, salt and cook until chicken is fully done.
Note: It can be frozen for up to 2 weeks. Defrost for 1 minute before using.
Directions for Chocolate Coconut Balls Preparation:
3. In a bowl add desiccated coconut, almonds, walnuts, chocolate and mix it well.
4. Now make balls shapes of this mixture and wrap them in aluminum foil. Set aside.
Directions for Mini Pizza Preparation:
5. Take the prepared dough, roll it out into flat circle. Now cut small circles from this dough.
6. Cook these dough circles on a preheated griddle for 1-2 mins from each side.
Note: They can be stored at room temperature for up to 1 week
7. Now place chicken, cheese, capsicum, olives on top of these circles.
Method#1: Place them in a preheated griddle again. Cover and cook until cheese melts.
Method#2: Microwave them until cheese melts
Directions for Assembling:
8. In a lunch box add prepared mini pizza, chocolate coconut balls and fruits. The lunch box is ready.
Prep time: 20-30 mins
Cooking time: 20-30 mins
Servings: 2-3
