I do one slice of Ezekiel bread, toasted, layer a slab of tofu, roasted bell pepper, smashed avocado, chili lime seasoning from Trader Joe’s, and fresh salsa. I eat that open faced sandwich every morning. It’s my favorite part of the day, and I look forward to it after I exercise earlier in the morning.

My go-to breakfast muffin recipe (makes 12). Inspired by a recipe from Simnett Nutrition. Ingredients: Dry: 300g Oat flour 33g Flax (¼ cup) 2 Tsp cinnamon 1 Tsp baking soda 1 Tsp baking powder 12 Walnut halves (36g), chopped 100g Raisins Wet: 350g Very ripe banana (3 medium-large) ...or 350g apple sauce 50g Moist dates 2 Tsp vanilla extract ½ Cup soy milk 2 Tbsp Lemon Juice Method: 1. Preheat oven to 180c. 2. Mix dry ingredients in a bowl. 3. Blend the wet ingredients in a blender until smooth. 4. Add wet ingredients to the dry ingredients in the bowl and stir well. 5. Fill your muffin tray with the mixture (I use a silicon one with a baking tray underneath). 6. Bake for 25 minutes. 7. Leave them to cool for a while before attempting to remove them from the tray. They work out at just under 200 calories each, if made exactly as stated above. They have 20 fewer calories each if you use apple sauce instead of banana. They freeze well.

I just started watching your videos. I have been doing my best going vegan and lost weight. I have low iron and due for an iron infusion soon. Prior I was eating meat everyday and didn’t change anything. My Good and Bad cholesterol went sky high. I feel so much better eating plant based food. You probably helped me more than you could ever know. You both our wonderful!!!!! 🙏😉

Wife here. A tip I learned was a game changer for me. I never liked oatmeal until I did the following . Take old fashioned oats put on sheet pan 350 degree oven . Bake 9 min turning every 3 minuets. They get nice and toasty then I add cinnamon , blueberries , chia and ground flaxseeds. Unsweetened Almond milk . Yum! Passing it along to oatmeal haters it’s way better like this .

I am obsessed with Moong dal dosas. Basically a lentil rice wrap seasoned with black cumin seeds a jalapeño and fresh ginger filled with diced potatoes, onions and peppers. The filling is seasoned with hot red pepper flakes, mustard seed, and fresh grated ginger.

I eat, blueberry and banana oatmeal every single morning. It never gets old! Sometimes I do it cold. Sometimes heated in the microwave. Sometimes make several days up and put them in the fridge. But the best thing is about organic, frozen blueberries and I freeze my very ripe bananas, so that when they thaw out, they just stir into the oatmeal and sweeten every single bite. I also add Chia and flax and cinnamon. Yum!

Tami (Nutmeg Notebook) has a great, healthy, very filling, Banana Quinoa Oat muffin. One of these with an apple makes a great “on the go” meal. They also freeze very well.

In my oats, I put zucchini, mixed berries, tbsp of mixed nuts, flax/chia, hemp, and to taste pumpkin or apple pie spice. I also like steamed red cabbage, yellow squash, mashed potatoes, or a crustless tofu veggie quiche for breakfast. In the summer, I sometimes have a smoothie with mixed greens, mixed berries, and my nuts and seeds. I've even eaten a big salad for breakfast.

I make steel cut oats in my small crock pot. I soak my oats for a couple hours first. I use 4 to 1 ratio. Four cups liquid to one cup oats. For the liquid, I use one tall can of Parrot coconut water with pulp and one can of goya coconut milk. I cook it overnight on warm. Yes warm, not low. I start it when I go to bed around 11 and its usually done by 8. It turns out super creamy and coconutty. I get 4-5 servings out of it.

I prefer cookies(oatmeal, raisin& nuts): my husband prefers blueberry muffins. Both are fast , easy to make. Other than cookies I prefer burritos & tacos for breakfast. Yuuum!!! God bless your family from grandma Katie in Oregon

The original overnight oats are so great. Just rinse and place some oat groats in your wide mouth thermos, and fill w boiling hot water from the kettle. Screw on the top, and it's cooked and ready to eat in the morning. Most people love oat groats, but hate cooking them. This solves that problem. Yay! Lovely to see you both.

Not exactly muffins but chickpea veggie bites. Basically a savory muffin made with sautéed veggies and a chickpea batter.

Hello from Georgia. As usual, you kids are rockin" it. Having my breakfast while watching you, baked potato with chipotle cheese sauce and greens at 1pm (I don't eat until I get hungry). Forgot about the sheet pan tofu; have to make this - love my tofu. You kids always make this old girl smile; thank you - stay well. Kisses and hugs to the babies.

I steam muffins on top of the stove. I steam them for 20 minutes and they come out really good. I like them better than when baked in the oven.

I usually have oatmeal with little bits of freeze dried strawberries added for breakfast. I add a splash of oat milk to make it creamy. I’ll also usually have a banana on the side. I haven’t made it in a while, but for dessert sometimes I make a vegan tapioca pudding. Sometimes I add cinnamon to it which makes it feel like Autumn comfort food. It’s delicious! I think I’ll make it this weekend.

I do tofu scramble and home fries, wfpb. Sometimes oatmeal, but I need to keep my potassium up for some reason, idk, so potatoes rule. going to try your sheetpan tofu!

Oof!! My airline for first class used to have a coconut chia seed pudding.. it was sooo good (only God knows if it was healthy with all the preservatives they probably added to it lol) but I made one at home which was similar and still soooo good! Chia seeds and boxed coconut milk (leave in fridge overnight). Top with some fresh coconut shavings when ready to serve. Good lord it's amazing!

I add apple juice (replace part of the water or plant based milk with it hit) and some puréed pumpkin and homemade pumpkin spice to the oatmeal. Top with nuts, coconut flakes or diced fruit. It is such a warming meal on a cold day.

Yes, Dillon, I too like to add a smashed, very ripe banana to the oatmeal water (while bringing to a boil). Learned that from Jane Esselstyn. Plus, cinnamon and about 3 frozen fruits (blueberries, raspberries, pomegranate ariels...) on top when done cooking.

These are great standard muffins that you can add whatever add-in’s you like (berries, raisins, chocolate chips 😊) Makes 9 bigger muffins or 12 smaller ones: 1 tbsp apple cider vinegar 1 cup (minus 1 TBSP) unsweetened plain plant-based milk of choice 1 1/2 cup whole wheat AP flour 1/2 cup oat bran 1/2 cup coconut sugar (or use date powder or sweetener of choice…can scale back if want but the muffins are not sweet) 1 tsp baking soda 1/2 tsp salt 1 cup apple sauce 1 tsp vanilla 1/3 cup add-ins (like the raisins, chocolate chips or berries etc) Bake 350F 18-20 mins Combine milk and ACV, let sit 5 mins. Using one bowl: whisk the flour, oat bran, sugar, baking soda and salt to combine. Then add the applesauce, « buttermilk » and vanilla and stir just to combine. Fold in your mix ins. I use silicone muffin liners, you could use paper or you’d need to spray your muffin tin a bit. Resist the urge to eat hot…they are better cooled. They are a bit gummy if you eat warm. But they are so good! Keep well and few days room temp, or fridge a week or freezer 3 months or so. They’ve never made it past a week here 😂

I love the Tightwad Gazette's "Create a Breakfast Muffin" recipe. While the original is not vegan, it's easily veganized & adaptable to what you have on hand: 2 - 2.5 cups flour 1 cup milk Up to 1/4 cup oil or melted butter 1 egg substitute Up to 1/2 cup sugar (or 3/4 c brown sugar) 2 tsp baking powder (or 3 tsp if using whole or cooked grains. But- if using "buttermilk", use 1 tsp baking powder & 1/2 tsp baking soda) 1/2 tsp salt Up to 1.5 cups additions (if using more than 1 cup wet additions, decrease milk to 1/2 cup), such as: Dry: nuts, seeds, dried fruit, coconut Moist: blueberries, chopped apple, shredded carrot, shredded zucchini Wet: pumpkin puree, cooked sweet potato, mashed banana, mashed cooked carrot You can sub applesauce for the fat Non-sweet combos work also Just experiment!

I have not ever really liked oatmeal. I tried doing the oatmeal in the crockpot for a couple hours to have for a few days ahead and then put in fridge. And then added strawberries and honey. But I just did not love the oatmeal. I always thought I hated sweet potatoes. But since eating like this, I decided to try to get some sweet potatoes and I cooked them in a potato bag in the microwave. And ate it with broccoli and I absolutely loved it. I put a little bit of honey on the sweet potato and I put a little salt, garlic and parsley shake on the broccoli. Make up the whole bag and keep in fridge for the week. Buy many bags of frozen broccoli from Costco. This has worked for me.

I have oat groats for breakfast with banana, blueberries, and flax meal. Sometimes I add ground nuts. Using groats allows it to store in the fridge for days without becoming a gelatinous mass since the starch stays in the grains. (1 lb groats, 1 lb water, in instant pot for 20 minutes, natural pressure release)

Oh, and I have oat milk with them at serving to make it wetter. The oat milk can be made with just 4 oz of oats to a tablespoon of a thickener (some combo of flax meal, hemp seeds, and/chia) filled to 32oz and blended really well. It doesn't make for an oat milk that you would probably drink by itself but in oatmeal it's just fine.

I grate carrots , zucchini, then add onions , garlic and mix with oats , steel cuts oats and add oat milk and bake in oven . Then eat 😊

I make these Yummy Muffins to take on the go and they are healthy enough for breakfast. In a large bowl, whisk together: 3 bananas, mashed - about 340 g 1/2 cup soymilk 1/2 cup plus 2 Tablespoons applesauce 1 teaspoon vanilla Stir in: 1 grated carrot 1/2 cup nuts, chopped 6 deglet dates, chopped -- or 3 large medjool dates (about 40g) 1/3 cup chocolate chips (optional - but yummy!!) In a bowl, combine: 1 teaspoon baking soda 1 teaspoon cinnamon 1 1/2 cups whole wheat flour or whole wheat pastry flour 1/2 cup oats Add dry ingredients to wet ingredients and mix until combined. Pour into lightly sprayed muffin tins -- this makes 15 muffins. Bake at 350 for 18 minutes. These freeze great! Enjoy!

Many years ago when my daughter was small she would not eat her veggies. Our Chinese doctor at the time said to make muffins so I grated every veggie I could and added it to a standard muffin recipe. I made carrot ones, broccoli ones, cauliflower ones, you name it. It worked as she ate them. So, I think we could take a standard, "healthy" muffin recipe and do that. Not going to lie, broccoli muffins kind of smell strong while they are cooking, ha, ha

Hey, Dilloin, I had forgotten that I had date powder in the cupboard -- didn't go into that one often, so it was purchased in 2022, and it is a bit hard -- it is beyond the date but smellls fine -- how could i use and reconstitute?

Sorry to slide off topic but you use an Instapot for whole potatoes right? I'm thinking of getting one. Worth it? Instant is a pressure cooker right?

unfortunately there aren't very many oatmeal brands that are glyphosate free. I have only found a few brands that are safe. Great ideas for the oatmeal though

@@katmeup7 very good. Oatmeal makes a very satisfying dinner. I heard that oatmeal has tryptophan in it as the cause for sleepiness and some people. I now found the perfect breakfast for me that does not cause any sleepiness -has a lot of protein and essential fats.

@@girasol58504 one slice of Ezekiel bread toasted making it an open face sandwich, and layer the following: bell peppers I roast in the oven, a slab of pan seared tofu, smashed avocado, Trader Joe’s, chili lime seasoning, dashes of Tabasco, and fresh chunky salsa that you get in the refrigerated area of supermarkets. A wonderful, delicious combination and with the healthy fats and adequate protein It really fills me up for hours.
