Hi Guy, You can do all the mellows and pineapple the day before. You CANNOT do raspberries, strawberries, or blackberries. The berries will get very soft within about 2 hours of washing. The raspberries and strawberries will also bleed into the other fruit as well. So do all the berries last minute. Also, wrap the platter very well. What's up Maplecook. Just to let, I have watched both of bagel videos, start to finish. How does one come up with brewing you own beer to make yeast, to use in a bagel recipe? And of course you getting real sea water, to reduce down to get rock salt...true genius! Anyway, I haven't actually commented yet as my thoughts are still marinating. I normally do something called a caterers rap. Pull the saran wrap out, far enough, that you can place the platter on top of the saran and wrap the entire platter. I do that in both directions so that the entire platters is wrapperd
