Ingredients:
Hawaij Spice Mix Recipe
Ingredients:
• 1 tablespoon cumin seed
• 1 tablespoon black pepper
• 1 teaspoon cardamom (8-10)
• 1 teaspoon coriander
• 1/2 teaspoon cloves (8-10)
• 1 inch cinnamon stick
• 1 teaspoon turmeric powder
Instructions:
1. Combine the Spices:
○ Measure out all the spices: ground cumin, ground black pepper, ground cardamom, ground coriander, ground turmeric, ground cloves, and ground cinnamon.
2. Mix the Spices:
○ In a small bowl, combine all the spices thoroughly. Use a whisk or a spoon to ensure they are well mixed.
3. Store the Hawaij:
○ Transfer the Hawaij spice mix to an airtight container or a spice jar.
○ Store it in a cool, dry place. It will keep well for several months.
Using Hawaij in Yemeni Maraq
When making Yemeni Lamb Maraq, you can use the Hawaij mix to enhance the flavor of the broth. Here's how you can incorporate it into the recipe:
Ingredients for Maraq with Hawaij:
• 500 kg lamb shank pieces (with bones)
• 1 large onions, finely chopped
• -5-6 big cloves garlic, minced
• 1 large tomato, finely chopped
• 2 tablespoons pure ghee
• 2 teaspoons Hawaij spice mix
• 2 bay leaves
• 4 whole cloves
• 4 cardamom pods
• 1 inch cinnamon stick
• Salt to taste
• Fresh coriander leaves for garnish
• Lemon slices
• 8 cups water
Instructions:
1. Prepare the Ingredients:
○ Wash and drain the lamb pieces thoroughly.
○ Finely chop the onions and tomato, and mince the garlic.
2. Sauté the Aromatics:
○ In a pressure cooker, heat the ghee over medium heat.
○ Add the chopped onions and sauté until golden brown.
○ Add the minced garlic and sauté for another 2 minutes until fragrant.
3. turn heat to low and add the Hawaij Spice mix
○ Add 2 teaspoons of the Hawaij spice mix to the pot and stir well.
○ Add the lamb pieces to the pot and coat them with the spice mixture.
○ Cook the lamb for about 5-7 minutes until it starts to brown on all sides.
4. Add Tomatoes and Whole Spices:
○ Add the chopped tomato, bay leaves, whole cloves, cardamom pods, and cinnamon stick to the pot.
○ Stir well and cook for another 5 minutes until the tomatoes start to soften.
5. Simmer the Maraq:
○ Pour in 8 cups of hot water and bring the mixture to a boil.
○ increase the heat to high and cover pressure cooker with the lid. Let the 1 whistle come then turn the heat to low and cook for 20 minutes or until the lamb is tender and the flavors have melded together.
○ Open the lid after releasing the team naturally
6. Serve:
○ Once the lamb is tender and the maraq has thickened slightly, remove it from the heat.
○ Garnish with fresh coriander leaves and lemon slices
○ Serve the Yemeni Lamb Maraq hot, alongside a plate of fragrant Mandi rice.
