Ragi flour/Nachni powder are the local names we have for the tiny red Finger Millet Seed flour. Whatever you call it, the numerous benefits it brings to the body don’t change. This recipe tastes best with Coconut milk. Though I’ve used regular milk, I highly recommend Coconut Milk- this also makes this recipe vegan! If palm jaggery is unavailable you may use cane jaggery. You may only lose the earthy flavour it provides. It need not be refrigerated; 3 to 4 hours on the kitchen counter will let it cool completely and then it can be overturned and relished :)

2 Tablespoons Finger Millet Flour (Ragi or Nachni powder)
1 pinch Salt
75 grams of Palm Jaggery
1 Cup Water
1 Cup Milk or Coconut Milk (latter is better)
Cardamom powder (optional)
Nuts for garnish (optional)
